The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. The fruit comes from our Quindalup vineyard and is simply made in a stainless steel tank for freshness.

The Deep Woods Estate Hillside Semillon Sauvignon Blanc is a wine that can be enjoyed on release but will find further complexity over the next two to three years. The palate is clean and lively with tremendous depth of ripe stone-fruit and the aroma of nectarine, ripe citrus and white blossom.
