Our Bespoke Gin is made from scratch in small batches in Tasmania. Carefully distilled from a premium grape base, pure Tasmanian water and a unique blend of Tasmanian grown (fresh Lime and Rose) and internationally sourced botanicals (twelve total Botanicals)

Aged 4yrs in American Oak ex Makers Mark barrels, our Single Malt Bourbon Cask brings rum and raisin aromas with a subtle vanilla and a spiced herb oak undertone. Symphony No. 1 is the first blended malt from the House of Lark, representing a composition of exceptional Tasmanian single malt whiskies. Crafted from a symphony of complementary casks, Head Distiller Chris Thomson has expertly woven the complexity of American oak bourbon with the balance of sherry and heavier depth of port to form a creamy, oily melody of flavours; a malt whisky thats full of life from start to finish and carries the uncompromised signature of Lark Whiskya Tasmanian icon.

Aged 4yrs in Portuguese sourced Port barrels and re-conditioned in Tasmania, Iron House pure Tasmanian Single Malt Port Cask is an enticing drop. The initial pour sits in the glass with a reddish orange embered hue and greets the nose with a stone fruit, red wine, buttery, sweetened spiced aroma. A palate of red berried wines, dried dark fruit, orange zest, hazelnut oak warmth with a touch of dark chocolate, tobacco and heat.

Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.

Tasmanian Single Malt Whisky. Aged in ex Makers Mark Bourbon Cask Nose: Immediate sweet notes of vanilla and crème brulee with fruity and herbaceous undertones. Palate: From a bright and sweet opening the flavours build across the palate to a rich, clean alcohol-driven crescendo culminating in a big, warm and comforting glow of spicy tannin hints and peach flesh. Finish: Long and warm with the afterglow fading into semi-sweet caramel and lingering stone-fruit tingles

Poltergeist Gin is produced in small batches at the historic Shene Distillery in Pontville, Tasmania. Poltergeist Unfiltered retains the full flavour profile of all twelve botanicals, completely covering the front, middle and back of the pallet with a long lingering finish. It may ghost over ice due to the density of flavouring oils derived from the botanicals. The flavour profile is earthy and robust, and the balance of brawny botanicals like liquorice root, cardamom, orris root and Tasmanian pepper berries, with the more traditional citrus and nutty gin flavours, is unique. Drink it straight over ice, in a classic martini or a negroni.
