Hobart Whisky Signature is a marriage of small carefully selected American oak ex-bourbon casks. A satisfying light ex-bourbon cask single malt that delights with a solid malty foundation, some gentle spice and a long, complex finish. Tasting Notes: Nose Freshly baked apple pie with cinnamon, raisins, sweet crust pastry and vanilla custard. Palate Marzipan icing with hints of vanilla bean over malty and clean oak foundations. Fizzy sherbet overtones lend this classic bourbon cask dram a lovely zing and brightness. A couple of drops of water serve to sweeten the sensation and open some subtle floral tones. Finish Long and clean with a lingering semi-sweet sherbet fizz with hints of almond providing a very pleasant semi- dry conclusion.

Hartshorn Sheep Whey Vodka
Voted World's Best Vodka at the 2018 World Vodka Awards. Produced in batches as small as fifteen bottles at a time, this super smooth vodka is created from the discarded whey left over from the cheese-making process. It undergoes two complex fermentations before the liquid is distilled. The resulting vodka has little heat and plenty of character, and is designed to be enjoyed straight at room temperature in a large aromatic glass. Says Angus Burton, the vodka’s distributor, “On its own, expect to find tropical fruit and vanilla-butterscotch aromas and flavours, but the highlight is the pure, cream-like texture of the spirit. This is not liquor that needs to be enjoyed simply, nor drowned in juice. We suggest over ice or in an elegant dry Martini with a lime zest. This vodka doesn’t need to be messed with.” Each bottle is hand sprayed black before the label is hand written and signed by head distiller, Ryan Hartshorn. 40% Alc./Vol.

Our lamington liqueur combines notes of chocolate, vanilla and coconut, blended in our sugarcane spirit and for today's modern rebellious spirits - boosted with a dollop of sweet strawberry jam. Overeem Sherry Single Malt Whisky
Single cask malt whisky from Overeem in Tasmania aged in a French Oak Sherry quarter cask. This smaller cask leads to greater interaction between wood and liquid during maturation and results in a more intense whisky.
Spring Bay Tasmanian Pink Gin
Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.
