Aged 4yrs in Portuguese sourced Port barrels and re-conditioned in Tasmania, our pure Tasmanian Single Malt Port Cask is an enticing drop. The initial pour sits in the glass with a reddish orange embered hue and greets the nose with a stone fruit, red wine, buttery, sweetened spiced aroma.A palate of red berried wines, dried dark fruit, orange zest, hazelnut oak warmth with a touch of dark chocolate, tobacco and heat.This water of life tells a story, hence our Tasman Whisky is housed within in a gift box worthy of the high quality tomes of old. Hartshorn Gin Sheep Whey
The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.

Impression Bay Distillery is located on the beautiful Tasman Peninsula, Tasmania. Our First Impression Gin is made in the London Dry style and incorporates not only traditional botanicals including juniper, cardamom, coriander, cassia bark and lemon myrtle but also our three, fresh, locally grown aromatic botanicals, Mountain Pepper berry, Saltbush and Kunzea. These botanicals are vapour infused in the last stages of distillation in our German still, preserving their subtle aromas and flavours. First Impression Gin is smooth, well balanced and unlike some other gins, crafted to be enjoyed neat or on the rocks. 42%ABV.
