Stone fruit notes greet the nose which are then reflected onto the palate that has a length of flavour befitting of a premium Chardonnay.

Devil's Lair The Hidden Cave collection was created to showcase the daring and innovative approach to Margaret River winemaking. Oliver Crawford hits the mark beautifully with this Chardonnay that is bursting with Granny Smith apple aromas. In the mouth the wine is a cascading behemoth of white peach and rich nougat.

Xanadu Fusion Chardonnay gives an elegant bouquet full of pears, grapefruit and gala apples with underlying hints of nougat and cashew. The palate is medium bodied displaying white fleshed stone fruits and zesty citrus flavours. The wine offers an almost crystalline minerality, complimented by a lovely creamy/marshmallow texture derived from lees stirring whilst in barrel. Taut and fresh, the bright fruit and crisp acidity combine to focus the wine perfectly to a lingering fruit finish.

This excellent expression of Chardonnay, partly due to only limited time in oak, is light, fresh and zesty but with inherent complexity. Pale straw in colour, this wine exhibits lifted nectarine and white blossom characters with underlying minerality and depth. The palate is clean and lively with tremendous depth of ripe stone-fruit flavour nuanced by cashew notes. A refreshing backbone of natural grape acidity provides further structure and length.

This estate-grown Sauvignon Blanc and fruit from selected Southern Margaret River growers. Zesty citrus, passionfruit and herbal aromas are combined with hint of 'gunflint'. The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. Growing up in the Hunter Valley, he was encouraged to be adventurous, curious and hard working. It was playing rugby in many of the world’s winemaking regions, travelling and working through New Zealand, France, Spain, Portugal, US, Italy, Coonawarra, McLaren Vale and Margaret River that sparked a further love of wine. He’s now settled in Margaret River where he has the 'opportunity to work on the land and create something that speaks of its place'.

Medium bodied, the lively palate offers freshly squeezed citrus flavours combined with passionfruit, thyme and spice. An easy drinking varietal with wonderful purity fruit driven, honest and lip-smacking with crisp acidity and a clean refreshing finish.
