The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. Xanadu Fusion Chardonnay gives an elegant bouquet full of pears, grapefruit and gala apples with underlying hints of nougat and cashew. The palate is medium bodied displaying white fleshed stone fruits and zesty citrus flavours. The wine offers an almost crystalline minerality, complimented by a lovely creamy/marshmallow texture derived from lees stirring whilst in barrel. Taut and fresh, the bright fruit and crisp acidity combine to focus the wine perfectly to a lingering fruit finish.
