The Regional Series from Capel Vale showcase grape varieties and their most suited regions. This example of Margaret River Cabernet has all the traditional flavours of blackcurrent, bay leaf and a hint of cigar box.

Yellow Tail Cabernet Sauvignon is a bright red colour with a fragrant nose of primary red fruits and blackcurrants. Aromas of crushed blackberries with sweet mocha also fill the nose. Brimming with rich blackcurrant fruit and sour cherry flavours, the wine is mid-weight and displays a soft velvety finish.

Made from low yielding vineyards at Moonambel in the Pyreness district of central Victoria, Dalwhinnie is an example of how good Victorian Shiraz can be. Tremendous depth of flavour running the gammet from red currants to dark plums, spice and mineral. The plentiful tannins are absorbed by the fruit and the finish is long and lingering.

The 2008 marks the 25th anniversary of Dalwhinnie Chardonnay in the Pyrenees in western Victoria, and the wine is still not missing a beat. With less oak used now than in previous vintages, the wine exhibits magnificent citrus and mineral flavours and aromas with a delicate honey flavour notes and texture. A truly elegant wine.

Crafted exclusively from Estate grown fruit, Taltarni Cabernet Sauvignon honours the winerys international reputation for making superb red wines. Taltarnis great legacy is deeply rooted in the unique combination of low yielding gravelly loam soils of its vineyards and the temperate climate of the Pyrenees, producing wines hallmarked by distinctive regional characteristics of mint, pepper and spice. A dark purple colour, the wine displays blackberry and blackcurrant flavours balanced with nice toasty characters provided by the French oak. On the palate, the tannins offer a nice structure where the fruit carries the flavours for quite a long time.

Dense crimson‑garnet hue leads into aromas of black cherry and bramble fruit layered with sandalwood, peppercorn and a whisper of truffle. The palate is elegant yet powerful — ripe dark plums and cassis, framed by fine, chalky tannins and warm cedar oak, finishing long with forest‑floor depth and an echo of spice.

Deep purple color. Aroma: Sharp fruity flavors with herbaceous notes. Flavor: A deep flavor profile with savoury and spicy notes, typical of the region's Cabernet Sauvignon.

The 2017 Moonambel Shiraz is eminently balanced and refined on the nose, with blood, minerals and flowers in equal measure. This is super composed, balanced and, as far as wine drinking pleasure goes, a triumph. There are notes of cardamom pod, sandalwood, scraped vanilla pod, pomegranate molasses, crushed rocks and kicked earth, and the layers of flavor are defined by very fine, ductile, tannic texture and support. Pepper Tree have quickly established themselves as one of the showcases of not only the Hunter Valley region, but the other three regions where they source premium fruit from; Orange, Wrattonbully and Coonawarra. Award winning winemaker, Jim Chatto is at the helm of this progressive winery and here he produces a Cabernet Sauvignon of upmost class and complexity. A nice nose of cassis and dark berries with a hint of oak, ripe rich fruit that fills the mouth with blackcurrants and soft tannins.
