The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. Our philosophy has always been to give our wines time to develop in the bottle before release, a rarity in today’s market. Enjoying wines when they are ready to drink, rather than straight after bottling, when the wine has had time to develop and balance up in the bottle with no screaming parts. This cane cut is produced from Sauvignon Blanc vines planted in 1987. Hand harvested on the 17th of April at 23 baume. Fruit cold crushed to press and cold settled before a 12 o C ferment in barrel. Aged on light lees for four months before bottling.

The 2018 Single Site Cabernet is an elegant wine with notes of blackcurrant, black cherry, and a hint of mint. Displaying a perfumed nose of dark berry fruits and earthy tones, there is a smooth silkiness to balance the fine chewy tannins of the Cabernet.

Lifted blackberries, mulberry, plums, earth and dark chocolate dominate the nose and palate at this early stage. Whilst showing plenty of inky dark fruits, violets and bitter chocolate. The palate also displays wonderful fruit and oak tannin, the result of 16 months oak maturation.

Dense aromas of plum pudding, dried apricots and eastern spice introduce a voluptuous palate, boasting silky tannin, delicate hints of fresh summer berries and earthier tones of toasted oak and freshly cracked allspice.
