The rich and full-bodied Coppermine Road Cabernet Sauvignon, named after a neighbouring road, is based on "parent of the Reynell Clone" material, renowned for its low yield, violet blackcurrant aromas and naturally high acidity. This is a classic "best-of-vintage" Australian-style Cabernet Sauvignon, with a great reputation for aging. Typically it shows intense mulberry, violet, cedar aromas with rich cassis, plum, dark chocolate flavours, muscular tannins and underlying savoury oak. After vinification in headed-down open fermenters, fermentation is completed in barrel. 18 months maturation in new and old French oak follows. Older wines may show a touch of earthy, sage, mint characters.

The grapes used to craft Credaro 1000 Crowns Chardonnay were handpicked and whole bunch pressed. The juice obtained was directly run off into barrels, and wild fermented with yeasts. This led to the creation of a pale straw coloured wine with a deep green rim. The perfumed nose exudes scintillating aromas of white peach, pear, nougat and citrus. This delightful Chardonnay is smooth and juicy on the palate, brimming with flavours of stone fruit, grapefruit and citrus blossom. The aromas and flavours are supported by a fine and delicate layer of mineral acidity, offering a creamy texture and a lingering finish. This medium to full bodied white wine has the potential to be cellared for 5 to 8 years from vintage, tasting wonderful with grilled fish, pumpkin pie and creamy camembert cheese.

Mount Horrocks Cabernet Sauvignon is the result of Stephanie Tooles expertise in finding the right balance between fruit richness and oak maturation. Beautifully marrying these two components has given birth to a poised, well-structured, and delicious wine that will keep you wanting more. The nose is a fragrant display of light herbs, fresh mint and red currant aromas with hints of cedar-like oak. The palate boasts of delightfully ripe tannins, and features red currant and other classic dark fruit flavours. This dark and inky Cabernet Sauvignon will definitely blow you away with its complexity, depth and vibrancy. It pairs very well with savoury beef, game meats and cheese.

Margaret River is renowned for its premium Siraz wines. This example emanates from one of Wilyabrup's a multi star rated Halliday Winereis. The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. Aromas of glazed plums, cloves and cracked peppercorns give way to a rich palate with hints of citrus blossom, oyster shell and vanilla pod compliment a long and complex finish, further exhibiting a bright fruit core and pure longevity of pristine tannin. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Frankland Estate Olmo's Reward, named after Dr Harold Olmo who first identified viticultural potenital of the isolated Frankland River region, is an elegant blend of Cabernet Franc and Merlot and small components of Malbec, Cabernet Sauvignon and Petit Verdot. The concentrated palate has fine grained tannins, dark chocolates and savoury earthy notes leading to a generous and long finish.

Each bottle is deliberately and meticulously created: from the delicate balance tasted within each glass, to the small touches of family handwriting and messages on our labels. Our philosophy has always been to give our wines time to develop in the bottle before release, a rarity in today’s market. Enjoying wines when they are ready to drink, rather than straight after bottling, when the wine has had time to develop and balance up in the bottle with no screaming parts. This cane cut is produced from Sauvignon Blanc vines planted in 1987. Hand harvested on the 17th of April at 23 baume. Fruit cold crushed to press and cold settled before a 12 o C ferment in barrel. Aged on light lees for four months before bottling.
