Made using the Petillant Naturel method aka Pet Nat, this wine is a rock star in and out of the bottle. Made from a blend of the energetic chardonnay from the famous Saltwater River vineyard and pinot noir rose. It sees a small amount of new oak for added texture. This is some seriously good pet nat, living up to Tasmania's reputation as the home of Australian fizz.

Tasting Notes Aroma Lifted aromas of ripe citrus, honeydew and peach blossom. Palate The generous palate has a soft, yet delicate structure with typical varietal flavours of nashi pear and lychee. The wine has a delightful creaminess but finishes dry with beautifully balanced acidity.

Loads of flavour here, but not as much oakiness as you might think. Sure, it's there, but the vibrancy and depth of the fruit more than compensates. Dark fruit freshened by minty regional undertones, great length and smoothness brought about by 5 years in our cellar, and you have a terrific Coonawarra cabernet.
