As Australian Chardonnay continues its re-emergence, Vasse Felix Heytesbury is firmly leading the charge with its complex, modern style that has seen the winemaking team take home a cabinet full of trophies and gold medals in recent years. 100% wild yeast fermented and matured in French oak for only nine months, there is a power and persistence that is unmistakable. A flavour cavalcade of matchstick, citrus, white peach and grapefruit alongside a subtle toasty, nutty aspect from the sublime oak regime. The finish of this remarkable example will leave you in no doubt to this wines pedigree and ageability. Sheer classic.

Precision, strength and freshness are words that form the signature of Brocard's winemaking philosophy. The domain is among the most important of Chablis. Brocard wines represent the higher end of expression at each quality level. The Chablis Grand Cru Valmur forms a valley which offers subtle variations in terms of exposure: one part faces northwest and the other the south. With a well-balanced mineral character, the Valmur is imposing through its strength and surprising fruitiness. The wine comprises of 100% Grand Cru chardonnay, aged in old French oak for 14 months. A multitude of flavours can be discovered, including lemon, pepper, brioche, licorice and toast with mineral strength underpinning all.

Many of us wine drinkers have a soft spot for Chablis. Its with great reason too, given our climate and affi nity with seafood. A little over two months ago, we were thrilled when this wine hit our shores for the first time following a selective buying trip. Once again, it showcased its undisputed quality and notoriety in our tasting sessions. Established in 1850, this small family owned domain is the proven choice of so many when it comes to great Chablis. The estate comprises a mere 45 hectares of vines scattered throughout the region, grown on the famous Kimmeridgian limestone soils. Textbook in expression and style, super fi ne and elegant, this 2013 has perfectly poised, piercing acidity. This drives superb length of flavour on the featherweight light palate. There are several schools of thought on the etymology of Meursault without any clear winners, but according to one theory, its wines are so brilliant that they compete with the sun: Meurs soleil! Its aromatic power and exceptional balance between richness and acidity make this one of the great wines of Burgundy.

Pale gold with hints of green, PerrierJouët Blanc de Blancs awakens the senses with enticing aromas of hedgerow flowers elderberry, acacia and honeysuckle and tangy citrus. On the palate, its mineral freshness lingers into a surprisingly smooth, mellow finish, which adds to the charm of this delightfully lively, luminous champagne.

Penfolds Yattarna Chardonnay displays an initial bouquet of slate and wet stone, with nuances of lightly roasted almonds. Subtle hints of citrus, shrouded by nectarine and nashi pear fruits. On the palate, a spiced multi-citrus compote with a very delicate acidity. Balanced and will develop exceptionally well with cellaring.

The house of Besserat de Bellefon was founded in 1843 near Ay in Champagne, and is now based in Epernay. The hallmark of the house is the lower than normal pressure that the wine is kept at under cork. This lower than normal pressure does not reduce the effervescence, but softens it, allowing the wine to partner better with food. The Blanc de Blancs - delicate and subtle citrus displaying a pure form of elegance. This Premier Cru is found mid-slope on the border between Meursault and Puligny-Montrachet. The slope is very regular at between 3% and 6% and the soil is clay/limestone with red earth. The subsoil is a mixture of earth and flat volcanic rock which allows an extensive root system to develop. These conditions bring finesse and a touch of minerality to the wine.

This Katherines Paddock Chardonnay combines the richness, drive and classicism of one clone with the fine-boned flinty structure and chalky notes of the other. It is stylish with the modern expression of Australian style Chardonnay: tense, taut and sulphidic. It reclaims the middle ground where body, flavour and palate weight co-exist with structure, texture and restrained acidity. This single-vineyard Chardonnay has well integrated natural acidity with rich varietal expression.

Cuvée du Perce Neige Bourgogne Blanc A soft and delicious introduction to the software behind the greatest database of Chardonnay in the world, written by one of its greatest programmers. Laurent Ponsot. A blend of different parcels, sourced across a litany of trustworthy growers and venerated communes in Burgundy. Yellow fruit accents are framed by a wisp of oak, a waft of phenolics and a crunchy skein of mineral pungency. The finish is long and firm, yet this is a wine of immense versatility at the table to be enjoyed on the earlier side.
