Margaret River is an under appreciated region for Australian Shiraz, and it's hard to see why with Cape Mentelle's Shiraz showing a vibrant core of blueberry, mulberry and hints of raspberry. It is well balanced with cocoa and savoury oak. The palate yet, is fine, elegant and focussed, finishing with chalky and structural tannins.

The Sangiovese fruit was simply destemmed, chilled and pressed using only the free-run fraction of the juice. It was then fermented at moderate temperatures using as always solely indigenous yeasts. After fermentation it was matured for three months on gross lees to add additional texture. The Nebbiolo fruit was hand-picked and, after chilling, whole bunch-pressed directly to old oak for fermentation. This took close to six weeks, after which the wine received a further four weeks maturation in barrel. At this stage the final blend between Sangiovese and Nebbiolo was decided and the wine was emptied from barrel/tank, settled, filtered, sulphured and bottled in late July.We are super stoked with the final wine!!The texture and acid structure are highlights of what is likely a more approachable and fruit-forward release of Nocturne rosé

Rich purple/red with a vibrant purple rim. Distinctly Margaret River; driven by aromas of blackberry, plum, bay leaf and a touch of black olive. The Merlot and Malbec add texture, balance, length and a luxurious fragrance to create a seamless and unique red. A dry, warm season was punctuated with a tropical rain event in January. This pushed back harvest and allowed for better balance during ripening. The resultant fruit had wonderful thick skins, incredible concentration and excellent varietal identity. The Cabernet was harvested late-morning, to ensure the fruit reached the winery warm to ensure a healthy, even fermentation. The Merlot and Malbec fruit was harvested during the cool of the early morning so it could be cold soaked on skins for 5 days prior to fermentation. The selectively harvested fruit was fermented over 10 days, with the Merlot and Malbec undergoing partial wild fermentation. The Cabernet remained on skins for 20 days to ensure a beautiful, vibrant colour. All elements were then matured in French oak for up to 15 months. Each individual barrel was assessed to determine which were included in the final blend.

The aroma is of blackberry and cassis with no leafiness and an earthy, Moroccan leather bouquet typical of the Whalebone terroir. The flavours are rich and strong with an underlying fresh varietal complexity including the spiciness of Cabernet and the fresh leather and anise of Shiraz. The tannins are at once grainy and substantial providing a savoury and long finish. This is an excellent example of Australias own red blend and a pure expression of these unique terroirs.

This Margaret River is ripe, complex and concentrated showing classic Margaret River Cabernet characters of cassis, mulberry and bay leaf. There is balanced cedar oak along with cocoa powder, damp earth and gravel dust. The palate is full and structured with fine grain tannins. There is cassis, cocoa, bay leaf, damp earth and cedar oak. The wine has a firm, long finish with enough concentration and structure to provide medium to long term ageing. Match with traditional roast lamb with rosemary. A family owned and run winery situated in the Northern Margaret River wine region. Kevin & Jenny McKay established the winery in 2001, twenty years on and the aim is still the same. Forester Estate is absolutely committed to the approach of fruit sourcing with considerable resources applied to small batch winemaking in an effort to discover the ‘gems’ that lie among the hills and valleys of Northern Margaret River. Colour: Deep red with purple hue. Aroma: Clean and fragrant, showing great purity and concentration. The wine opens with blackberry, cassis, gravel dust, bay leaf, cocoa and fine cedar oak. Light gold, with a fresh, green rim. Stonefruit, pear and citrus notes and seductive fresh toast, dried herbs and malty aromas from barrel fermentation. Palate Remarkable fruit sweetness, intensity and persistence, matched with lovely texture and savoury elements and balanced by fresh, natural acidity. A prolonged cool and wet growing season meant the vines were lush and healthy heading into ripening. This resulted in later harvest dates, accentuated by the cool and wet ripening months; conditions not experienced in Western Australia for more than 10 years. These conditions, coupled with the absence of heat events, produced highly aromatic whites with good natural acidity. The fruit was selectively handpicked at perfect ripeness, before being loaded into an airbag press and gently squeezed. The free-run juice was continuously tasted until an optimum point was reached. The juice underwent wild fermentation in new French oak puncheons, then remained in barrel for 7-10 months, with monthly lees stirring to provide texture and mouthfeel. Each batch was carefully assessed for inclusion in the final blend. This minimal handling has produced a unique, delicate Redbrook Chardonnay style that will develop great complexity over time.
