Domaine de Chevalier Blanc Pessac-Léognan

Domaine de Chevalier uses traditional methods when making their flavoursome white blend of Sauvignon Blanc and Semillon. Fermentation occurs in oak casks and is then aged for 18th in oak, some of which is new. This practice was abandoned by many in Graves, only to be (rightfully) regenerated to allow wines of substance and character to be produced once again. Chevalier's Blanc is a wine that is taut and restrained that opens up over a six to eight year period to reveal a wine of supreme delicacy.

Henriques & Henriques Terrantez 20 Year Old Non-Vintage Non-Vintage

Historically considered to be the great grape of Madeira, Terrantez, was introduced in the late 1600's. By the 18th and 19th centuries Terrantez was producing what many experts considered to be the greatest wines of the island. However, the 1852 oidium outbreak destroyed most of the Terrantez vines, followed by phylloxera which put paid to the rest. Nowadays the variety is practically extinct and efforts to revive the plantings have been hampered by the grape's low yielding nature and susceptibility to rot and to mildew in Madeira's humid climate. Henriques farm several tiny parcels of rare Terrantez, and are recognised as one of the leading producers of wines made with this variety.

Guimarens Fonseca

Aromas of ripe fruit and plum pudding. Opulent and creamy nose with hints of violets. In certain years when there is no classic Fonseca Vintage Port, a Guimaraens Vintage Port may be made instead. Guimaraens Vintage Ports nevertheless share the origins, heritage and complex fruity style of the classic Fonseca vintages and are drawn from the produce of the same three estates. They differ only in that they are more approachable, ready to drink earlier. Should be decanted before being served. Stand the bottle upright a few hours before decanting to allow the sediment to fall to the bottom of the bottle. Pour the wine in a slow, steady stream into a decanter, ensuring that only the clear wine is poured, leaving the sediment behind.

Veuve Clicquot La Grande Dame

Veuve Clicquot La Grande Dame is name in honour of the famed and undoubted Champagne pioneer, widow Clicquot. Widowed at the tender age of 28, Madame Clicquot continued her late husband's work and is the sole reason why her Champagne house is held in the high esteem that it is today. The 1998 La Grande Dame is a wine of pure beauty and power. A majority blend of Pinot Noir, the vintage conditions are clearly visible in the glass with flavours of peach, apricot and touch of brioche and nuttiness. A true classic for the ages.

Chateau Rieussec 1er cru classe

Since 1984 Château Rieussec has been the Sauternes property of the Rothschild family, owners of Chateau Lafite. Rieussec, a neighbour of Chateau dYquem, had for generations been a leading producer and was ranked Premier Cru in 1855. Even so, under Rothschild ownership the property has been transformed, with new cellars and winery and far more rigorous grape selection (plus greater use of barrel fermentation and maturation) for the flagship Grand Vin. This has led to Rieussecs clear emergence as a rival to its famous neighbour. Chateau Rieussec is 90% Semillon, with minor contributions from Sauvignon Blanc and Muscadelle. The property is 110ha with 68ha under vine.
