Pale Amber colour. Very complex aromas already with orange bitters, almonds and a hint of honeysuckle. This wine has a textural and concentrated palate with great length and persistence. Delightful notes of orange, toffee and gentle saltiness on the finish. It is a tannic wine. This new release of our Amber wine is a blend of Semillon and Sauvignon Blanc selected from our certified Biodynamic vineyard. The wine was left on the skins and fermented partially before being pressed off. The skin maceration went from 9 days to 44 days depending on the parcel. The fruit was processed in different vessels: open fermenters, closed tanks as well as amphorae. This explains some of the complexity and the many layers of this wine. We look at it being a natural step in creative as well as artisanal winemaking. On the advice of eminent agronomist Dr. John Gladstones, Dr. Kevin and Diana Cullen planted a trial acre of vines at Wilyabrup, Margaret River in 1966. Commencing in 1971, 18 acres of vines were planted on their sheep and cattle farm, including their first Cabernet Sauvignon vines. Sauvignon Blanc, Chardonnay, Semillon, Merlot and Cabernet Franc were planted between 1976 and 1978.

Appearance: Vibrant green gold. Aroma: Punchy guava with white flesh nectarine, and a hint of passionfruit pulp lift from the glass. There is an underlying lime zest note that helps to support these exotic characters. Citrus and subtle creamy elements help to complex the wine. This is a multi-layered, and engaging nose.Palate: Ripe nectarines, guava, some flinty highlights, with a lime zest finish. The palate has wonderful textures, while retaining a juiciness of fruit and lightness. There is great intensity of fruit, and fantastic length of flavour. The wine finished with a chalky mineral acidity, but subtle fruit flavours linger with this cleansing finale. The length of palate is the real key here - this is a Sauvignon Blanc that can be ruminated upon, but also just enjoyed.

Intensely fresh with delicate aromas of passionfruit, white nectarine and tropical fruits. The palate shows zesty lemon and crisp green apple finishing with steely minerality and lingering succulent acidity. A collage of lime, lemon and fresh pear are layered on a generous creamy palate. The fruit flavours reflect the purity of Karridale Sauvignon Blanc with the Semillon fleshing out the mid palate adding a depth of richness and volume. The wine finishes with finely balanced acidity and lingering freshness.

The conditions for the 2019 vintage created wines of incredible aromatics and elegance, yet with great power. Light gold with green tinges in colour, the aromatics whirl with notes of freshly cut grass, blueberries, lemon, and kaffir lime. The palate has a bright and refreshing acidity, trailing through with crisp lemon, kaffir lime, and an excellent mouthfeel and texture. There is a beautiful phenolic tension driving the flavours right to the back palate. Tremendous length and agility with enduring perfume and charm. An iron fist in a velvet glove.

This Semillon Sauvignon Blanc is a perfect representation of the rhythm of Western Australia with a combination of crisp clean white, sunshine and the whispering of the wind through the vines to create Torch Song. Viticulture - Fruit is sourced from neighbouring properties in the northern Yallingup sub-region of Margaret River. Direct input from Forester’s viticulturist ensures well balanced canopies and crops are grown for the ripe style desired. The 2022 vintage was a mild year for white grapes in Margaret River, allowing plenty of time during January and February to ripen the fruit to our specification. Winemaking - Modern white winemaking techniques are employed in the production of the Lifestyle Sauvignon Blanc, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. The clarified juice is then racked to a fermentation tank. A range of specially selected yeasts are employed on different parcels of fruit and the resulting dry tanks of wine are carefully blended to maintain the Forester Style. Storage and Bottling - Bottled under screwcap into a burgundy bottle.

Grape variety - 100% Sauvignon Blanc Oak maturation - 56% of the wine spent 5 months in French Barriques. 11% in new oak and the balance in 1 and 4 year old oak. Colour - Pale straw-green. Aroma - Complex with underlying fruit punch. The wine opens with smokey lanolin, chalk, talcum powder and subtle cedar oak. There are ripe fruit characters of gooseberry, papaya, blackcurrant, lychee and roasted red capsicum. Palate - Rich with a creamy texture and balanced acidity providing good drive to the palate. There are ripe fruit flavours of lychee, papaya and gooseberry with cedar oak and a wood smoke complexity. The finish is firm with a long passionfruit finish. A complex Sauvignon Blanc made in a Fumé Blanc style. Food matches - Goats cheese salad with asparagus, scallops with pea puree. Peak drinking - Drink now to 2026. Viticulture - Handpicked fruit from the open lyre trellis “Home Block” vineyard went into this Sauvignon Blanc. The 2022 vintage was a warm year for white grapes in Margaret River allowing plenty of time during January and February to ripen the fruit to our specification. Winemaking - The fruit was harvested very early in the morning, then sent immediately to the winery for processing. 44% of the wine was fermented in stainless steel with a known yeast strain. The remaining wine was fermented in French barriques with 49% of the blend being fermented with wild yeast on medium to high solids. The final blend was put together in July 2022. Storage and Bottling - Bottled under screw cap into a premium burgundy bottle in August 2022. After elevating the Sauvignon Blanc to the ‘Premium’ status within the Forester range in 2009, we have further increased the structure and complexity of the wine through barrel fermentation, partial wild fermentation and storage on lees.
