Deeply flavoured with blackcurrant and blackberry fruit with lifted vanilla and spicy notes from new tight-grained French oak. Strong with rick black fruit flavours and structured with a long, complex palate and fine tannins.

Generous blue fruits, like mulberries and blueberries, a full and frank Shiraz start. Typical Barossa, generous, flavoursome and super sweet blackberry pie with dark dry chocolate mouth feel. Begins with sweet fruit then tightens up with fine fruit and oak tannin. Great flavour and composition. Sweet spice cuts through and hints of jamminess. Youthful austerity as you would expect from such a classic old school Shiraz but there is also plenty of fineness to the tannin and dark chocolate nuances in the lengthy finish.

An array of red fruits and spiced oak. Light red fruits and spiced oak. Fermentation completed in a stainless steel fermenter for 10 days. Pressed onto 1g/L of French oak (Cuvee Series No.1) chips. Matured on oak for four months. Blended with 10% of mixed white wine (pinot gris and riesling) to help soften tannins. Vivid crimson hues. Shiraz. Its Wine. Drink it. Red-brown loam over shale and red clay vineyards in the South and Central Barossa Valley enable St Hallett to create wine parcels of generosity of flavour, length and texture like Faith shiraz.Dark berry fruits and a soft and luscious palate are the hallmark characters of this wine. Pepper spices and chocolate notes marry together with softly coating tannins to complete this rich and generous palate.

A moderately warm and early spring brought flowering on earlier than the long term average. Gentle slow ripening from summer months without extreme heat allowed for gradual ripening of tannins while retaining high levels of natural acidity in the fruit. Perfect for Cabernet Sauvignon. The fruit from the 20121 ‘Sfera’ Cabernet Sauvignon was harvested from our Block 5 Cab Sauv. Machine harvested at night to retain freshness, before haulage to the winery. For us ‘oxygen’ is a bad word while in the winery. Only small amounts of gentle pumping over was needed for the 2021 year as the colour and tannin were already present from the vineyard. Pressing of skins took place on day 6 and the wine was transferred to stainless tanks. The 2021 Cabernet has hints of spearmint, dark chocolate and classic cigar box. Gliding tannin’s will see this wine sit in the tomb for many years to come. Pair with smelly cheeses or another bottle.
