These Willamette variety raspberries are grown in the deep south of Tasmanian, in the foot hills of our world heritage Mount Field National Park at the Westerway Raspberry Farm, owned and operated by the Clark family for over 25 years. These raspberries, originally from the north-west of USA are a sweet and juicy variety, great for jams, juicing and of course gin ;). With a very short shelf life and harvest season (4-6 weeks) you have to be quick to get your hands on the real thing, but if you miss out, don’t worry…. we have the next best thing :).

Single cask malt whisky from Overeem in Tasmania aged in a French Oak Sherry quarter cask. This smaller cask leads to greater interaction between wood and liquid during maturation and results in a more intense whisky.

The first ever release of Sullivans Cove XO Double Cask Brandy is a marriage of ten different casks, each selected for their individual flavour profiles to create a uniquely Tasmanian spirit much more than the sum of its parts. Each brandy in this batch was aged for between nine and ten years in various French Oak ex-tawny and American oak ex-Bourbon casks, distilled from a wide variety of Tasmanian wines including chardonnay, pinot noir, gewurztraminer, sauvignon blanc, cabernet sauvignon and merlot to achieve incredible complexity. Lighter and more citrusy than Sullivans Cove XO Single Cask, Double Cask remains a beautifully full-bodied brandy with an intriguing balance of topical and savoury

Like Sullivans Cove Single Cask whiskies, XO Single Cask Brandy is bottled one cask at a time, allowing each to express its own unique character and producing only a very few bottles of rare quality. This brandy will strike a chord with single malt whisky drinkers due to its intense depth, rich complexity and balanced elegance.

Knocklofty Garden Gin is made with seasonal, surplus raspberries rescued from local gardens. The berries are steeped in our gin to provide a unique, natural taste.

Impression Bay Distillery is located on the beautiful Tasman Peninsula, Tasmania. Our First Impression Gin is made in the London Dry style and incorporates not only traditional botanicals including juniper, cardamom, coriander, cassia bark and lemon myrtle but also our three, fresh, locally grown aromatic botanicals, Mountain Pepper berry, Saltbush and Kunzea. These botanicals are vapour infused in the last stages of distillation in our German still, preserving their subtle aromas and flavours.
