London dry gin. Blackwater No. 5 is a classic London Dry Gin, distilled from the purest spirit, the finest botanicals and soft local water. It balances the confident juniper notes of a traditional London Dry with bright coriander, warm cinnamon and zesty lemon. Blackwater No. 5 is crisp and elegant, great as a G&T, excellent in a cocktail.

The Pasilla Mixe chilli is the hero here. Sourced directly from the Mixe farmers on the Sierra Norte mountains, we macerate the smokey chillis in a special alcohol made from Danish heritage Purple Wheat and organic malted barley. After distillation those same chillis are then used to make a Pasilla Mixe kombucha which is also distilled and then blended in to adjust the alcohol percentage.

Our Double Barrel has sucked the marrow out of two casks, Bourbon and Oloroso. They each bring their own unique flavour and character. While the Bourbon barrels add, among other things, sweet, smooth vanilla notes, the Oloroso casks layer on those dried fruit and slightly nutty flavours. Distilled in London at Thames Distillers, Fords Gin is a collaboration between 10th generation master distiller Charles Maxwell and gin expert Simon Ford. A modern take on a classic London Dry Gin, Fords Gin starts with a traditional base of juniper & coriander seed balanced by citrus, florals and spices that are steeped for 15 hours before being distilled. Each botanical blends together to create the perfect base for any gin-inspired cocktail. A mix of 9 botanicals including Juniper, Coriander, Lemon Peel, Bitter Orange Peel, Grapefruit Peel, Angelica, Cassia, Jasmine and Orris. is a very bright and aromatic gin with a light sweetness on tip of the tongue. A gentle introduction of the botanicals follows with notes of angelica root and citrus oils balancing on the palate beautifully. The finish lingers with fresh zesty grapefruit and juniper.
