While the wine is naturally fermenting in the foudre we introduce Pinot Gris, Riesling, Chardonnay & Pinot Noir juice at different stages as a way of increasing the natural silky mouth feel while maintaining fruit vibrancy.

The 2021 Estate Grown Shiraz is a blend from Tyrrell's Short Flat, Weinkeller, and NVC Vineyards. These dry grown blocks were planted in 1968, 1970 and 1996. These three blocks produce a modern style of Shiraz that has both richness and approachability and pays homage to the classic Hunter River Burgundies (HRB) of the mid-twentieth century.

The Chalmers Nero dAvola is deliberately made in a drink-young, lifted red-fruit style reminiscent of the Cerasuolo wines of Vittoria. This wine shows a vibrant fruits-of-the-forest and blueberry nose with pretty rosehip aromatics. The medium-bodied palate marries savoury boysenberry fruit with chalky tannins, sweet spice and just a touch of blood orange.
