Forester Estate Margaret River Premium Home Block Shiraz
Grape variety - 100% Shiraz. Oak maturation - 40% new and 60% older French. notes. Colour - Deep red with purple hue. Aroma - Concentrated with bacon fat, pepper, lifted florals and incense. There’s an underlying meaty-gravy complexity with balanced oak, mulberry and plum. Palate - Full with a dense texture and fine grain tannins. The palate is loaded with pepper, beef gravy, potpourri, black raspberry, mulberry and plum. A complex, savoury and elegant wine that’s more Syrah than Shiraz Food matches - Seared prime beef and roasted root vegetables or Fillet of venison with wild mushrooms. Peak drinking - Drinking well now but will show further integration over the next 8 - 10 years. Viticulture - The Home Block Shiraz vineyard comprises 0.7 ha of open lyre, minimal irrigated vines planted on ironstone gravel over deep friable loam. Judicious shoot and bunch thinning is always used to maintain a very light crop which was hand picked in early March of 2021. Harvested at 12.5º Baume the fruit exhibited intensely concentrated flavour and colour. Winemaking - The hand picked fruit was harvested early in the morning and processed straight away. 5% whole bunches, including stalks were placed into the bottom of the fermenter before filling. The remaining fruit was de stemmed into the small open fermenter with heading down board, which keeps the cap fully submerged between drain and returns. After nine days of fermentation, the fruit was pressed into a blend of new and used French Burgundian barrels. Storage and Bottling - Maturation lasted 11 months before the wine was carefully blended and bottled. Bottled under screw cap to retain freshness in a premium Burgundy bottle. Held in bottle for approximately 1 year prior to release.

Forester Estate Premium Cabernet Sauvignon
This Margaret River is ripe, complex and concentrated showing classic Margaret River Cabernet characters of cassis, mulberry and bay leaf. There is balanced cedar oak along with cocoa powder, damp earth and gravel dust. The palate is full and structured with fine grain tannins. There is cassis, cocoa, bay leaf, damp earth and cedar oak. The wine has a firm, long finish with enough concentration and structure to provide medium to long term ageing. Match with traditional roast lamb with rosemary. A family owned and run winery situated in the Northern Margaret River wine region. Kevin & Jenny McKay established the winery in 2001, twenty years on and the aim is still the same. Forester Estate is absolutely committed to the approach of fruit sourcing with considerable resources applied to small batch winemaking in an effort to discover the ‘gems’ that lie among the hills and valleys of Northern Margaret River. Cullen Amber Sauvignon Blanc
Pale Amber colour. Very complex aromas already with orange bitters, almonds and a hint of honeysuckle. This wine has a textural and concentrated palate with great length and persistence. Delightful notes of orange, toffee and gentle saltiness on the finish. It is a tannic wine. This new release of our Amber wine is a blend of Semillon and Sauvignon Blanc selected from our certified Biodynamic vineyard. The wine was left on the skins and fermented partially before being pressed off. The skin maceration went from 9 days to 44 days depending on the parcel. The fruit was processed in different vessels: open fermenters, closed tanks as well as amphorae. This explains some of the complexity and the many layers of this wine. We look at it being a natural step in creative as well as artisanal winemaking. On the advice of eminent agronomist Dr. John Gladstones, Dr. Kevin and Diana Cullen planted a trial acre of vines at Wilyabrup, Margaret River in 1966. Commencing in 1971, 18 acres of vines were planted on their sheep and cattle farm, including their first Cabernet Sauvignon vines. Sauvignon Blanc, Chardonnay, Semillon, Merlot and Cabernet Franc were planted between 1976 and 1978.
