It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. The classic Margaret River blend. Pale green in colour, with aromas of succulent Sauvignon Blanc and grassy Semillon. The palate is flint-dry with an initial impact of sweet racy fruit and a fine and lengthy finish.

Cape Mentelle Sauvignon Blanc Semillon is delicate yet full, the palate is distinctively lemon and lime with subtle star anise, lemongrass and clove. Richness and weight are balanced with fresh acidity, giving direction and finesse.

Once & Well is an elegant example of Chardonnay from the cool climate of Margaret River. Once & Well sets a high benchmark for this wine style. Ripe stone fruit and spring florals with hints of spice and oak on the nose, this wine has a mouth watering acidity structure that complement the richer mouthfill of the wine beautifully.

The Hidden Cave range from Devil's Lair is the chance for the winemakers at this iconic Margaret River winery to express the daring and exciting edge to the regions wines. Their Semillon Sauvignon Blanc is a racy little aromatic white with exotic aromas of crushed basil and lychee that are followed by flavours of gooseberry, mango and passionfruit. All capped off with some lime zest on the finish to complete this supreme crisp dry white wine.

This Madfish Sauvignon Blanc Semillon has alluring aromas of guava, nashi pear, citrus zest with a hint of white floral on the nose. The green apple and passionfruit notes shine through beautifully the lime citrus backdrop on the palate. A delightful and refreshing wine that could easily be paired with seafood or summery dishes

Fermentation in stainless steel tank allows the full expression of Chardonnay fruit aroma without the influence of oak or lees resulting in a bright, clean tropical fruit bouquet. The palate is rich with tropical fruits, clean zippy acidity balances the sweet fruit character resulting in a bright fresh flavoursome palate. When good quality Chardonnay is used unwooded Chardonnay takes on a whole new level of depth and intensity.

Chardonnay is our favourite grape and this wine, from Oatley family vineyards at Mudgee, delivers a modern take on the Australian style: full-bodied yet crisp, with citrus and melon fruit flavours. Roast poultry or pork will partner it well.
