Born-and-bred Hunter Valley specialist, Aaron Mercer spent years at Tamburlaine, and had stints at Tyrrell’s and Brokenwood, before setting up on his own. He’s also worked in California, France and Germany so brings a great deal of experience to his winemaking, with a a great small-batch range from premium Hunter Valley sites, Tumbarumba and Orange. This classy, gently oaked Hunter Chardonnay boasts fresh peach, vanilla, and pannacotta flavours and a nutty edge.

A portion of the wine was fermented with indigenous wild strains of yeast and this was blended with traditional barrel fermented and lees-stirred components. The result is a multi-layered wine in the traditional opulent Bunnamagoo style.

Recognised as one of the first vineyards in the Hunter Valley, Audrey Wilksonson has a long and storied history in the region. Majority French oak is used to mature a wine that has flavours of intense cherries and violets overlapping powerful mulberry and that traditional Hunter character of forest floor and earth.

Aroma/Palate: Made from the classic Hunter white varieties semillon (70%) and chardonnay (30%). The semillon provides great freshness with its citrus acidity, while the chardonnay lends this wine a wonderful balance and fullness on the palate. The grapesfor this wine were picked from our 40 year old vines grown in the volcanic soilof the ancient Fordwich Sill. These low yielding mature vines produce ripe, concentrated fruitwhich results in a wine with excellent regional and varietal characters.

David Hook's Shiraz is medium bodied, some vibrant characters of spicy red berries and soft rounding tannins with hints of vanilla oak on the palate. Ripe fruits richness with a lengthy finish. A great number to have handy when friends drop by.
