This Saignée style Rosé goes well with sticky sweet pork ribs. Crispy skin duck with chinese scallion pancakes and quandong plum sauce. Fresh fruit platters and cheeseboards. Our 2021 Rosé is a Saignée style Rosé. Saignée refers to the act of bleeding juice from crushed red grapes. The bleeding of the juice yields a pale coloured juice that is perfect for the production of flavoursome fuller style rose wines. Fermentation followed by a brief period of time on lees has delivered a perfect summer style drink.

We think great Rosé should offer appealing texture as well as bright fruit flavours. The use of a small portion of old oak in the wine helps to achieve textural interest.Pale onion skin colour. Cranberry, redcurrant, white strawberry and lemon zest. Bone-dry and savoury, showing tart red fruits and orange rind, balanced fusion of tannin and acidity creating a savoury, mouth-watering finish.

The nose is vibrant with lifted aromas of spring and summer red fruits; raspberries, strawberries, cherries with hints of rose petal and Turkish delight. The palate is rich with flavours of maraschino cherries, balanced with delicate hints of rose water. The natural fruit sweetness of this wine is balanced by a lively mineral acidity and a dash of savoury spice. Early ripening Shiraz on sandy loam from our most Northern site. Harvested at a lower Baume to create a light pretty style with natural acidity. Harvested in the cool of the night. The grapes were crushed and held on skins until the ideal colour extraction had been achieved before being lightly pressed under inert conditions. Fermented in stainless steel vessels. Yeast strains that promote the natural berry characters were selected. Cool fermentation temperatures. The final blend was given a light fining before being filtered and prepared for bottling.

Evans & Tate Strawberry Fields Margaret River Rose is a proudly easy-to-drink and flavoursome wine. Early ripening Shiraz fruit was gently handled and cold fermented to deliver a perfectly balanced combination of vibrant strawberry and cherry flavours with a delicate rose petal note. Serve well chilled with coconut based curries or summer barbeques.

Using luck, art, and science (L.A.S.) aim to make absolutely delicious, delectable, desirable drops and to discover new flavours in the world of wine. Based in Margaret River, Western Australia, their mantra is minimal intervention with maximum flavour and where possible aim to work with growers using sustainable, organic and biodynamic vineyard methods. The L.A.S. Vino Albino PNO is made from pinot noir & chardonnay grapes grown in forest grove soils over granitic rock. The vineyard sits on the banks of the willyabrup river, only kilometres from the Indian ocean where cool ocean breezes flow up the valley. It’s one of the oldest and last remaining vineyards in Margaret River that contains Pinot Noir. A small one hectare vineyard with high density plantings and two different clones planted in 1980. Hand picked fruit, whole bunch pressed and naturally fermented in barrique. In comparison with other years the wine is lighter in colour and lower in alcohol, yet has body and balance through a secondary ferment, regular lees stirring and the addition of Chardonnay (14%). You can think of it as a rose if you like, but its a lot more than that. Lifted aromas of strawberries, rockmelon and cream.
