The West Winds Gin story began back in 2009 when two mates (James Clarke and Paul 'The Doctor' White) hatched a plan to create unique styles of Australian gin using local and imported botanicals that would be cut with triple filtered Margaret River rain water. Within a month of launching, The West Winds had already made a strong impression on the gin world, winning numerous accolades at the 2011 San Francisco International Spirit Awards. 'The Sabre' - a Gold medal winner from said awards - presents a traditional British style gin led by underlying citrus and a dominance of juniper, followed by the classic coriander seed. The addition of wattle seed adds a depth to the mid palate and introduces a creamy texture without the need for artificial additions. Best served with lemon and tonic or fresh watermelon juice.

Sitting at the traditional Sloe Gin strength of 26% alcohol, Ink Sloe & Berry is a lower-alcohol option for those who want to drink less and enjoy more, and is perfect for sipping on the rocks. Poltergeist Gin is produced in small batches at the historic Shene Distillery in Pontville, Tasmania. Poltergeist Unfiltered retains the full flavour profile of all twelve botanicals, completely covering the front, middle and back of the pallet with a long lingering finish. It may ghost over ice due to the density of flavouring oils derived from the botanicals. The flavour profile is earthy and robust, and the balance of brawny botanicals like liquorice root, cardamom, orris root and Tasmanian pepper berries, with the more traditional citrus and nutty gin flavours, is unique. Forty Spotted Rare Tasmanian Gin is hand distilled in small copper pot stills using the steeping method of Gin production and use of traditional botanicals of juniper berry, coriander and lemon peel creating a traditional London Dry style, but incorporating something a little bit special to give this Gin a unique finish.
