Taminga is a variety that has been created to suit the warm conditions of the Murray Darling and it's right at home in this Botrytis style by Trentham. Lifted citrus on the palate with a luscious and lingering palate of apricot and toffee.

The Noble One by De Bortoli is considered Australia's premier dessert wine, and for obvious reasons. The wine has won countless awards at the leading wine shows around the country and has a wonderful propensity to develop even further in the bottle. The 2002 Noble One is a classic expression of the style with rich apricot treacle characters with fig and orange blossom still active on the nose and palate. Hints of vanilla bean and a refreshing acidity on the finish mean this decade old wine will continue to live in the cellar for many years more.

Dal Zotto is a family run winery in the King valley specialising in traditional Italian varietals. Their Barbera is a great example of the variety with ripe blood plums, spice, and a meaty savouriness. A great food friendly style - add a splash to boost your bolognaise!

Fred Pizzini grew up in Italy and is bringing the taste of his homeland to the Australian dining table. His Sangiovese is one of the best examples in the country, with spicy, savoury fruit hiding a vein of mouth watering acid that is a hallmark of the variety. Delicious now - and will get better with bottle age!

Toolangi is a state forest just outside Healesville that was devastated during Black Saturday. The excellent vineyards remain, and continue to produce wines of personality and place. The Chardonnay combines varietal characters of quince and crab apple with some delicious nutty oak nuances. Its great value.

Château Filhot is set amongst the woods and fields of Sauternes and is one of the most beautiful estates in the region. No oak is used in the production of Filhot, only glass-fibre vats that contribute to the elegant structure of the wines, rarely becoming the uncious and full bodied wines that generally have a higher proportion of Semillon. The Filhot from the 2009 vintage is dominated by a subtle nutty note, most prominantly almond. Château Rayne-Vigneau produce both a dry and sweet white wine on the estate with the sweet style taking all the accolades in recent years. Great vintages like the 2009 can produce a wine of sheer opulence and concentration. Layered honey, apricot and orange zest are all tighly packed in a Sauternes that is a perfect match for intense cheeses and flavoursome desserts.

A great Margaret River Shiraz with temperate ripening conditions promoting fruit intensity, richness and fine tannins. The palate is restrained and balanced with flavours of plum and aniseed spice.

Rockburn Pinot Noir is a ripe, fleshy pinot noir with black cherry, blackcurrant and toasty oak flavours. Good concentration and a silken texture with powerful sweet fruit flavours driving a lengthy finish.

Marc Brédif Vouvray is a stylish Chenin Blanc from the Loire Valley in France. Very intense and fruity nose with notes of white flowers and quince. A unique wine in that they have the ability to age for many decades, developing palate weight and honeyed complexity as they age.
