Bollinger B13

Bollinger B13 Champagne Bollinger has also released an iconoclast. B13. An extremely limited wine crafted across five indomitable Crus, half of which is equal parts Äy and Verzenay. The wine is a testimony to the frigid nature of the 2013 vintage and the late harvest that was necessitated through the eye of a needle marked by sleet, snow and frost. It was this slim window of opportunity that Bollinger perceived as one of marginality; extremes and the sort of challenges that demand courage. For it is these qualities that define the worlds very greatest wines. Aged for more than seven years on lees, bolstered by old reserve wines aged in magnums and the signature skilled oak handling, this is a one-off prestige cuvée in every sense of the term. Power, precision and immense potential, all signatures. Jangly stone fruits and a smoky, pungent mineral underbelly. Richard Juhlin, the worlds pre-eminent commentator on the region opines that it is precisely the symphonic harmony that impresses most, before suggesting that the wine needs time in the cellar. Essie Avellan MW calls it my favourite of Bollinger Limited Editions so far! The Champagne received 95 points from each.

Billecart-Salmon Sous Bois Non-Vintage

This unique cuvee is respectfully composed of the three champenois grape varieties - Chardonnay, Pinot Noir and Pinot Meunier. Entirely vinified in oak, Sous Bois (under wood) totally masters the art of blending by renewing the ancestral spirit and savoir-faire of the original Champagnes. The nose contains defined aromatics of dry fruits and fresh citrus, coupled with finely buttered seductive notes that expresses the mature complexity linked to the vinification in oak barrels. The palate is bursting with flavours of grilled brioche, vanilla and toffee, complimenting the refreshing texture and exceptional finish.

Umamu Estate Margaret River Macann Sparkling

This is our first of the MacAnn Sparkling series. 'MacAnn' is after our founders – my parents Mac & Ann – who discovered the Margaret River in the early 80s and fell in love with our vineyard in 1997. Bursting to say hello and invite you for banter, MacAnn Sparkling is a wine for celebrations and especially when celebrating life. MacAnn Sparkling is made from Semillon with a splash of Sauvignon Blanc in the traditional method. The grapes were picked in the early morning on 15th March 2019 and battonaged weekly for two months to make the sparkling base wine. Then into bottle on the 25th July on lees for 15 months. Disgorged on the 27th October 2020 with 4g/L.

A masterpiece among the finest wines of Champagne. The quintessence of the Pommery style. 2005 aka the year of stillness. It was a plentiful and quality harvest that took place in cool,dry and sunny conditions. All the ingredients required for an excellent vintage were present, leading to Cuvée Louise. Having taken the time to choose the best plots, having waited patiently before going to harvest, having picked only the finest bunches and selected onlythe purest pressed juices, we managed to perfectly unleash the potential of this vintage, while preserving the identity of the terroirs of the three Grands Crus that make up CuvéeLouise by Pommery: Ay, Avize and Cramant. Cuvée Louise is the perfect champagne to celebrate an exceptional moment. Great accompainment to oysters, steamed fish as well as grilled vegetables such as asparagus, mushrooms and artichokes.
