Matured in port puncheons, Limeburners Whisky is aged for up to 8 years. The resulting single malt is all spice and fruit with aromas of port and vanilla on the nose, barley, honey, raisins and caramel on the palate and finishes smooth.

The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.

Then we swerved from the expected. Heavily-peated whisky barrels direct from Islays finest distilleries would give our whisky a peat character never yet tasted in Starward.In each sip of Unexpeated, ripe red berries meet a coastal peat smoke. Sweet peat lingers in the aroma and lengthy finish.Pair with smoky dishes like trout or grilled eggplant for a flavour sensation. St Henri is a time-honoured and alternative expression of shiraz, and an intriguing counterpoint to Grange. It is unusual amongst high quality Australian red wines as it does not rely on any new oak. Released for the first time by Penfolds in the early 1950s (first commercial vintage 1957), it gained a new lease of life in the 1990s as its quality and distinctive style became better understood. Proudly, a wine style that hasnt succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters with age. It is matured in an assortment of old large vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of cabernet may sneak into the blend, the focal point for St Henri remains shiraz.

Distinctively "cabernet", and clinging to its youth tenaciously, the 2015 Bin 407 is only just starting to show some evolution. The elegant tannins are beginning to resolve, the dense, dark fruit softening - the layers melding. Cassis, black currant, mocha and mint flavours shine through. There's lots more to this multi-layered wine for you to discover. It's exciting to drink top cabernets like this, but no need to hurry - it's a brilliant drink now, and will continue to improve for ten years.
