Penfolds Bin 407 began life back in 1993 with the release of the 1990 vintage Cabernet Sauvignon. Created as a result of the availability of high quality Cabernet fruit, Bin 407 is inspired by its older brother, Bin 707. Not only offering varietal definition, but also approachability, structure and depth of flavour. The Bin 407 highlights the Penfolds approach to multi-region, multi-vineyard blending to create a Cabernet that rewards the drinker in both early and later years.

Another string to their 'Single Vineyard' bow, Wynns reinvested in the Child's vineyard in 2009 - elevating the fruit there from its traditional supporting role in other premium releases (including John Riddoch and Black Label) to having a dedicated bottling of its own. On the nose: Ripe dark fruit, a hint of mint, toasty oak and cedary development.On the palate: Intense black fruit power melding well with deluxe mocha oak a rich, dense and complex reserve style with tight, grainy tannins and spicy acidity.

Cape Mentelle's Cabernet Sauvignon under the guidance of Rob Mann has become one of Australia's most prestigious Cabernet's. Sourced from what many believe to be the true home to Cabernet in Australia, the Margaret River, Cape Mentelle produce a wine that has a plush full-flavoured palate of concentrated blackcurrants and mulberries with a minerally spine. Richly textured and vibrant the palate finishes long with fine yet firm gravelly tannins. A superb candidate for some medium to long term cellaring.

This iconic label by Yalumba has a proud history from it's first release in 1962. Quite possibly the quintessential Australian Shiraz Cabernet blend, 'The Sig' shows vibrant Barossa aromas of dark fruit and spice and a concentrated palate that is long and deeply flavoured. Representing the pinnacle of any given vintage, the Deep Woods Reserve Cabernet Sauvignon from the very low yielding original vines on the estate in the Yallingup region of Margaret River and a single growers vineyard in the Yallingup hills. The palate is layered with complex and generous varietal flavours, supported by interwoven French oak characters and a savoury complexity. One of the Margaret River's more celebrated producers, Howard Park have forged a healthy cult following. The 2001 Cabernet Blend is a full bodied red that has developed liquorice and humidor characters beneath a layers of concentrated blackberry.
