O'Leary Walker Claire Reserve Shiraz

VINEYARD: Fruit is sourced from 120-year-old dry grown Shiraz vines from Martin & Joan Smiths vineyard in the Polish Hill River. Grey loam acid soils over sandstone and slate make up the profile with much of the top soil littered with rock, hinting at just how tough the vines need to be to sustain growth and produce quality fruit - not to mention the work of the vigneron to ensure overall balance. Despite growing these vines organically since their planting in the 1970s, 2012 marked the first year of NASAA Organic Certification for these vineyards. VINIFICATION: Handmade in 2 and 4-tonne fermenters, the fruit is de-stemmed and fermented using natural yeast. Hand plunged up to 4 times daily to control temperature and maximise flavour and tannin extraction. Left on skins post fermentation for 15 days, then lightly pressed and transferred to French Oak barriques for 30 months.Only 630 x 6 packs produced. COLOUR: Deep dark red brick with a slight purple tinge. BOUQUET: Concentrated with blackberry spice with hints of chocolate and cedar. PALATE: Powerful Clare Valley Shiraz with rich mid-palate fruit with long grainy tannins, oak complexity and balance of acidity. FOOD MATCH: A delightful complement to strong cheeses and gamey meats.

Tim Adams Aberfeldy Shiraz

This is the flagship wine of the stable, made largely from 100 year-old Shiraz vines in the Clare Valley. The Aberfeldy label has long been synonymous with quality, representing Tim Adams best wine. Year after year, this wine continues to deliver the best that Clare Valley Shiraz has to offer. Picked at optimum maturity and following fermentation on skins for 14 days, the wine rested in new, carefully selected American oak hogsheads for 24 months before blending, fining and bottling. The wine has been sealed with a WAK closure, an internally threaded screw cap with a traditional look, and is worthy of keeping for up to 20 years in good conditions.

Woodlands Margaret Cabernet Merlot

The Woodlands Margaret is, true to its name, a realisation of all that is great about Margaret River, arguably Australias home of the Bordeaux style. Sourced from the Woodlands Vineyards in Wilyabrup this is a blend of 79% Cabernet Sauvignon, 13% Merlot and 8% Malbec. Considering the price of the Watson familys flagship, the Margaret offers truly outstanding value.

Katnook Estate Odyssey Cabernet Sauvignon

Katnook are synonymous with premium quality Cabernet from Coonawarra and this brilliant wine stands up against any great Cabernet in the world. Aged for 35 month in French oak, the aromas and flavours of dark berries and spicy plum are beautifully interwoven with mulberry. Will age for 10 - 20 years with ease.

Wynns Black Label Cabernet Sauvignon

Wynns Black Label Cabernet Sauvignon is the beacon of quality that all Australian Cabernet Sauvignon is compared to. Coming off the iconic red soils of Coonawarra, Wynns Black Label Cabernet Sauvignon is classic elegance. Chief winemaker, Sue Hodder, is able to craft a wine brimming with aromas of blackcurrant and plum that combine with spicy minty notes. The palate is well structured, long and fine. With the right cellaring condition, this could easily be a cellar gem.

Penfolds Bin 407 Cabernet Sauvignon

Penfolds Bin 407 began life back in 1993 with the release of the 1990 vintage Cabernet Sauvignon. Created as a result of the availability of high quality Cabernet fruit, Bin 407 is inspired by its older brother, Bin 707. Not only offering varietal definition, but also approachability, structure and depth of flavour. The Bin 407 highlights the Penfolds approach to multi-region, multi-vineyard blending to create a Cabernet that rewards the drinker in both early and later years.

Parker Coonawarra Estate First Growth Cabernet Blend
