A star-bright lemon hue with a hint of pink reflects the ripeness of the fruit. The wine is bursting with aromas and flavours of ripe pear, quince, guava, cinnamon and ginger. It expands on the palate to become mouth-filling and unctuous but its richness is balanced by a refreshing and zesty core of minerality.

The Winemaking: Once harvested the fruit was crushed and pressed; the juice was cold settled and racked to ferment. The ferment was carried out with selected yeast and stopped with some residual sugar. Post fermentation the wine was stabilised, clarified and bottled. Pale gold with green hues, the wine has aromas of strawberry leaf and nashi pear. These flavours continue on the palate where they are joined with custard apple, anise and crunchy green apples, creating a rich and succulent palate. The wine finishes with lingering acid and a hint of musk.

Peregrine Pinot Gris from Central Otago in New Zealand overflows with ripe pear, peach, mango, grapefruit and has an underlying steely minerality. It is well balanced and mouth filling with great persistence. Lovely drinking now, this wine will continue to develop over the next few years.
