Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. These world-class stills eliminate the damaging impact of heat on delicate botanicals, leaving us free to explore the many attributes of this multifaceted ingredient. To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. Joined by a supporting cast of single estate Australian coriander seed, Tahitian lime and lemon scented gum, the resulting spirit offers a supple start on the palate that makes way for a bold balance of citrus and herbaceous intensity that dovetails to a profoundly pine-laden dry finish.Bone Dry Gin rigorously balances a huge amount of raw power with nuance, poise and complexity to reveal an elaborate juniper experience that makes a great G&T and an even better Martini. Archie Rose Single Malt Whisky is distinctly crafted to highlight six malts, each with a unique profile and character. This six-malt mash bill, although incredibly low yielding, provides a rich and expressive flavour, full of distinct regional character.Matured predominantly in 100, 200 and 300-litre Australian Apera (Sherry) casks, complemented by a selection of Ex-Bourbon and Archie Roses own 36-month air dried Ex-Rye Casks, each coopered with a specific balance of both char and toast.The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Meanwhile, the palate is luscious with well-integrated flavours of sticky date pudding and amaretto with a final note of espresso.

Every ingredient for Domaine de Canton has been meticulously sourced. Ginger, revered for centuries for its health and mystical properties, is selected from Asia. Baby ginger is specifically used for its distinct flavor properties and viscosity. The Ginger is hand cut, rinsed, and allowed to dry for several days, in preparation for being married into the overall recipe. Additionally, hand-selected Tahitian vanilla beans and Provencal honey are sourced and added to the recipe in careful amounts. Domaine de Canton is produced without any preservatives, additives, or colorants, which results in subtle color variations in each batch.

Veuve Capet is the first Vodka exclusively made from Chardonnay grapes (hand-harvested in the famous Côte des Blancs, in French Champagne vineyards). After a fivefold distillation and charcoal filtration, this vodka was assembled with perfectly pure water. Veuve Capet has a unique character, combining roundness and fruitness. Tasting notes : Eye : Perfectly crystal clear. Nose : Rich and elegant bouquet. Fresh, dominated by citrus notes, including grapefruit zest, then evolving to exotic notes of mango and guava. Mouth : Very rich and supple in the mouth. Complex aromas with citrus, the finish is particularly long, dominated by Williams pear notes.

Split Point gin has a soft subtle delicate nose, teasing out the botanicals in an enticing release. a beautifully balanced gin across the palate. sweet upfront, revealing good juniper notes through to a wonderful finish.

Shirl the Pearl 2020 Harvest, a seasonal edition Cumquat Gin with fresh uplifting notes, zesty characteristics, and a long finish. Expect refreshing waves of orange blossom. Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

These Willamette variety raspberries are grown in the deep south of Tasmanian, in the foot hills of our world heritage Mount Field National Park at the Westerway Raspberry Farm, owned and operated by the Clark family for over 25 years. These raspberries, originally from the north-west of USA are a sweet and juicy variety, great for jams, juicing and of course gin ;). With a very short shelf life and harvest season (4-6 weeks) you have to be quick to get your hands on the real thing, but if you miss out, don’t worry…. we have the next best thing :).

Made using a tradition family recipe and Queensland barley aged for 7 years in ex redwine reconditioned French Oak barriques with American oak heads. This whisky displays rich luxurious amber colour, sweet honey and spice on the nose. Complex sherry, port and vanilla on the palate. Perfect for celebrating births, weddings, wakes and anything in between.
