The finest Australian sugarcane molasses are mixed with rainwater and small batch fermented, only the softest & finest spirit cuts are copper-pot distilled and charcoal filtered to crystal clarity. The result, a vodka that is exceptionally smooth while retaining some of its natural sweetness. Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.
