The juice is tank fermented, with 10% going through malo to add some flesh to the wines crisp Alpine bones. Lower than average yields have resulted in a racy, pulpy, kaffir-lime, apple, and spice scented wine with lovely, pithy minerality and a zesty bite on the finish.
