Rabbit Ranch Rosé

Bimbadgen Sparkling Rosé Non-Vintage
Bimbadgen Sparkling Rosé features a blush baby pink hue with fine bubbles stemming from the glass. Deviation Road Altair Brut Rose Non-Vintage
We select the fruit from the cool south-facing slopes high in the Adelaide Hills. Sweet strawberry, cherry and spice aromas follow through to the palate, where the lively bubbles add lift and balance to these fruit flavours. This wine has wonderful length and supple mouth feel. Winemaking: The fruit is all hand-picked and whole bunch pressed into tank for fermentation. A remaining parcel of Pinot Noir is fermented as red wine in open top fermenters with daily plunging. Fermentation lasts around 12 days and the wines go through malo-lactic ferment over winter to soften the acids. Blending then takes place, combining the clear base wine with around 4-7% of the red wine to achieve the pale pink colour and fruit lift that is signature of this wine. Try with tuna sashimi, salmon or chilli prawns.
Dune Bonaire Rosé
The style is bone dry but full of texture, red cherry sweet herbs and orange blossum. The 2018 is made from Carignan, Shiraz and a little Sangiovese . These were all picked for Rose in late February.The fruit was handpicked and pressed off into seasoned barrels and one stainless tank. The stainless tank was fermented cool on light lees- the barrel component was ambient, wild and on full solids. After a months the two parcels were blended and retuned to barrels prior to bottling. Dune is a new project from the family that brought you Coriole wines.

Deep pink in colour with purple hues, the nose reveals intense aromas of wild strawberries and raspberries with notes of garrigue. The mouth is delicious and fresh. Red berry and cream characters dominate the initial flavour rush and these are complemented by the secondary aged influences of stone fruits and lychee. The palate exhibits a soft and luscious fruitiness with an intriguing balance of dosage acidity and fine tannin. The flavours show great persistence and a beautifully fresh vibrancy.
