Product Description The 2021 Bon Vivant Rosé by Savaterre showcases the estate’s meticulous attention to detail and its mastery of blending varieties. Comprising 40% Pinot Noir, 40% Syrah, and 20% Chardonnay, this rosé offers a striking copper-pink hue and a wine of remarkable complexity. Aromas of rose petal, wild strawberry, white peach, cranberry, and red apple skin lead into an intriguing spice medley of star anise, nutmeg, and allspice. The palate is savoury and structured, with great acidity and a lively freshness that supports the deep, intense flavours. With its balance of texture, intensity, and length, this is a wine that excels when paired with food and good company. Maker: Savaterre is positioned on an elevated site with amphitheatre views across the King Valley in the rolling peaks and valleys of Beechworth. Located across the road from Giaconda, the site was discovered in 1996 by Keppell Smith, owner and winemaker. The close-planted vineyard is on ancient granitic soils at 440 metre (above sea level) and blessed with mild summer days, cool evenings thanks to the lofty elevation of the Victorian Alps. Viticulture follows low input principles and yields are less than two tonnes/acres. In the cellar, Kepp employs Burgundian techniques with the aid of indigenous yeasts. Each wine, be it Chardonnay, Pinot Noir or Shiraz has individuality and striking concentration. Savaterre's well structured Chardonnay is matured in generous new and seasoned tight grained French oak for up to 19 months. Chardonnay undoubtedly Savaterre’s hero. The Pinot Noir is deep and layered with cherry stone/chocolate aromas and plenty of richness and flavour, and shrewdly bottle aged before release. Finally the Shiraz, or should we say Syrah? Always highly perfumed with distinct red fruit preserve and floral character. Mid weight, velvety, seamless and almost pinot-like in its vibrancy and weightlessness. Super fine tannins and in a neat frame. Philosophy At Savaterre, winemaking is rooted in the respect for the land and the belief that great wines start in the vineyard. The estate embraces sustainable, organic viticulture, focusing on maintaining a harmonious balance between the vines and their environment. Keppel Smith’s philosophy in the winery centres on minimal intervention, allowing nature to express itself freely. By using indigenous yeasts and avoiding filtration or fining, Savaterre wines are crafted to showcase their terroir with purity and depth. The aim is to produce wines that stand the test of time while remaining approachable and true to their roots. Tasting Notes NOSE: Floral, Fruity & Spicy A lifted bouquet of rose petal, wild strawberry, and white peach, interwoven with cranberry and a hint of red apple skin. The aromatic profile is further enhanced by spices such as star anise, nutmeg, and allspice, adding layers of complexity to the nose. PALATE: Savory, Structured & Complex Bold structure that provides a wonderful contrast to the wine’s vibrant acidity.
