Bottled unflocked and unfiltered at 47% ABV, this cask yielded just 325 bottles. No two batches are the same, making each release an opportunity for exploration. Tasmania’s pure, clean water and rich barley-growing land make it an ideal location for producing world-class whisky. This combination of high-quality water and grain is the foundation of all Sullivans Cove whiskies. All Sullivans Cove whiskies are made from 100% Tasmanian malted barley. The wash is brewed locally by experienced brewers and then double-distilled in a unique Tasmanian-built pot still, affectionately known as "Myrtle." The first distillation, known as the "wash run," produces low wines of around 20% ABV, which are then distilled again during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before entering the casks for ageing. Most whiskies are aged in either 200L American oak ex-bourbon barrels or 300L French oak ex-tawny barrels, maturing for many years in Tasmania’s unique climate—typically between nine and eighteen years. Palate - Salted Caramel, Blackberry, Apricot Crumble The body is full and well-developed, showcasing salted caramel and plum jam alongside the tartness of blackberry and the buttery richness of sweet pastries and apricot crumble. St Agnes XO Grand Reserve 40 Year Old

Dalmore 21 Year Old Scotch Whisky
Featuring ginger cake, orange fondant, caramelised pear and brandy snaps on the nose with fresh ground coffee, chocolate ganache and cinnamon apple on the palate. Initially matured in American white oak, this limited 21 Year Old edition 2015 release is transferred into first-fill Matusalem oloroso sherry butts. Talisker 25 Year Old Scotch Whisky
Talisker, one of the remotest distilleries in the world, is situated on the storm lashed Isle of Skye and has a colourful history dating back to 1830. Denounced by the local clergy, praised by none other than Robert Louis Stevenson and even suffering a still-room fire in 1960, Talisker has survived and today produces some of the smoothest and character full malts in Scotland. The 25 Year Old is sweet and mild to begin, with some acidity and saltiness.
