Reminiscent of slow and salty days, Papa Salt is an easy-drinking gin made for sharing. Native Australian wattleseed and pink peppercorn are brightened with zesty wax flower, hibiscus, citrus peel and a hint of oyster shell. Have it short, tall or straight up. We'll take ours in the sun with soda water and a wedge of orange.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

Paying homage to the historical sailors, this Gin meets the test they required for “proof” that the spirit delivered was as promised by the British Royal Navy. Using the base of our Signature Gin the intensified strength provides an enhanced flavour experience where each botanical dances on the palate. A punchy hit of fragrant aromas from the citrus, and the subtle sweetness of premium vanilla. Hobart Whisky Signature is a marriage of small carefully selected American oak ex-bourbon casks. A satisfying light ex-bourbon cask single malt that delights with a solid malty foundation, some gentle spice and a long, complex finish. Tasting Notes: Nose Freshly baked apple pie with cinnamon, raisins, sweet crust pastry and vanilla custard. Palate Marzipan icing with hints of vanilla bean over malty and clean oak foundations. Fizzy sherbet overtones lend this classic bourbon cask dram a lovely zing and brightness. A couple of drops of water serve to sweeten the sensation and open some subtle floral tones.
