House of Arras Grand Vintage is at the pinnacle of Australian sparkling wine! The fruit is sourced from the cool climate region of Tasmania where Ed Carr (Gourmet Wine Traveller Winemaker of the Year 2011) and his team produce an outstanding wine of incredible complexity and character resulting from extended maturation on yeast lees.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

Symphony No. 1 is the first blended malt from the House of Lark, representing a composition of exceptional Tasmanian single malt whiskies. Crafted from a symphony of complementary casks, Head Distiller Chris Thomson has expertly woven the complexity of American oak bourbon with the balance of sherry and heavier depth of port to form a creamy, oily melody of flavours; a malt whisky thats full of life from start to finish and carries the uncompromised signature of Lark Whiskya Tasmanian icon.

Gin is created using limonene, one of the main compounds found in cannabis plants. The limonene adds an ultra-rich profile to the spirit, mingling alongside notes of juniper, mandarin and lime, and finishing with soft spice. Limonene is also found in citrus peel and is said to have anti-inflammatory properties which can be used to relieve stress and naturally decrease anxiety and depression.

Creamy mouthfeel packed full of rich dark fruits and sweet malt notes, which give way to sweet vanilla and cocoa interspersed with cinnamon spice. The whisky is matured in a combination of French and American oak ex-wine barrels plus finished in rare Morris Muscat barrels, previously used to create multi-award winning Muscat. COLOUR: Deep rich copper with reddish hues. NOSE: Rich with dates, figs and sweetness of dark molasses. PALATE: Well balanced and complex. Dried fig, sweet malt, vanilla and spices with creamy mouth feel. FINISH: Superb oak influence, lovely finish with satisfying after taste that lingers on the palate.

A whisky with a beat of its own, KURIO Crimson Jam blends exceptional Tasmanian Single Malts, uniquely finished in Tasmanian cherry and sparkling wine-seasoned casks. The result? A vibrant, full-flavoured expression that’s as bold as it is versatile. Jammy sweetness meets smooth apple-wood smoke, layered with honeyed apricot, nutmeg, and indulgent Black Forest cake. A luscious finish unfolds with cherry jam, custard, and velvety mocha.

Archie Rose Single Malt Whisky is distinctly crafted to highlight six malts, each with a unique profile and character. This six-malt mash bill, although incredibly low yielding, provides a rich and expressive flavour, full of distinct regional character.Matured predominantly in 100, 200 and 300-litre Australian Apera (Sherry) casks, complemented by a selection of Ex-Bourbon and Archie Roses own 36-month air dried Ex-Rye Casks, each coopered with a specific balance of both char and toast.The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Meanwhile, the palate is luscious with well-integrated flavours of sticky date pudding and amaretto with a final note of espresso.

Paying homage to the historical sailors, this Gin meets the test they required for “proof” that the spirit delivered was as promised by the British Royal Navy. Using the base of our Signature Gin the intensified strength provides an enhanced flavour experience where each botanical dances on the palate. A punchy hit of fragrant aromas from the citrus, and the subtle sweetness of premium vanilla. On the palate, the strong peppery pine taste of juniper combines with the citrus flavours and finishes with a super warmth from our spice combination. A Gin full of flavour that won’t disappoint.
