A ¾ tonne bell with the name of 'Angelus' sits proudly atop the cellars at Wirra Wirra and heralds the beginning and end of vintage every year on the famous McLaren Vale estate. Previously the bell rang out from the Jesuit Church in Norwood thrice daily and due to this tradition, Wirra Wirra continue to name the bell and their very best Cabernet Sauvignon every year, The Angelus. Always a pungent and concentrated Cabernet with notes of cassis, cedar and trademark bitter chocolate bound with fine tannins. A propensity to age in the bottle for over a decade as well as its approachability early in life will appeal to all.

The best parcels of wine that make up the Coppermine Road Cabernet mostly come from a rare low-yielding clone which is characterized by its violet and anise perfume, concentration and great acidity.

This is a wine of great generosity and depth. The nose exhibits an abundance of purple fruits, mulberries and plums - with a mix of baking spices including nutmeg, cinnamon and star anise. The palate is fleshy and juicy with an almost velvet like texture. The Grenache adds fruit character and balanced acidity, the Shiraz fills out the wine and delivers early structure while the Mourvedre provides red fruits and dried herb notes and provides a core of fine tannins.

The rich and full-bodied Coppermine Road Cabernet Sauvignon, named after a neighbouring road, is based on "parent of the Reynell Clone" material, renowned for its low yield, violet blackcurrant aromas and naturally high acidity. This is a classic "best-of-vintage" Australian-style Cabernet Sauvignon, with a great reputation for aging. Typically it shows intense mulberry, violet, cedar aromas with rich cassis, plum, dark chocolate flavours, muscular tannins and underlying savoury oak. After vinification in headed-down open fermenters, fermentation is completed in barrel. 18 months maturation in new and old French oak follows. Older wines may show a touch of earthy, sage, mint characters.

It is sweetly fragrant and instantly appealing on the nose showing dark and purple fruit aromas together with tar, game, cocoa and spicy oak nuances. The palate is rich, intense and fleshy, displaying excellent power as well as rounded mouthfeel, wonderfully complemented by velvety texture and silky tannins. Impressively flavoursome and very long on the finish with loads of delectable flavours. At its best: now to 2027

The wine is gorgeously fruited and fragrant on the nose showing dark fruit richness with smoked game, vanilla, chocolate tart and cedar characters. The palate is concentrated and wonderfully weighted, delivering fabulous fruit intensity and stylish oak infusion, backed by fine chalky tannins, finishing superbly long and sturdy. At its best: now to 2025.

A much-loved South Aussie red, this blended red is rich in black fruits that fill the mouth. Raspberry, red currant and plum fruits are balanced with fine sandy tannins and cedar oak. This medium to full bodied wine has a lovely balance and style in true Church Block character. Church Block was the first wine the late Greg Trott produced under the Wirra Wirra label back in 1972. He took the name from one of the original vineyards, which runs next to the small Bethany Church (Est 1854) across the road from Wirra Wirras century old ironstone cellars. Geoff Merrill Parham Cabernet Sauvignon is a deep red coloured wine with purple hints. It was aged in brand new American oak hogsheads for 27 months. Its complex and powerful bouquet exudes aromas of roast beetroot, dark chocolate, black olive, blueberry, licorice and mint. The focussed yet balanced oak creates depth as it opens up in the glass. The palate is fleshy, full of tannins, structured with tight acidity, and displays flavours of dark blue fruits, black cherry and olive. Enjoy it with runny double brie, white castello, or pork belly.
