The Hay Shed Hill Block 2 Cabernet Sauvignon displays ripe berry aromas of brilliant intensity with underlying earthen nature along with typical characters well noted from Margaret River. There is a depth here that is hard to fault, in fact its downright breathtaking. The palate itself is quite substantial, even by Western Australian standards; displaying fully ripe, fleshy sweet fruit filling the mid palate with great palate extension driven by the ripe and mature tannin.

Production: 2015 Vintage - 100 Cases Oak maturation: New & 2 Yr old French oak hogshead casks for 15 months. Handpicked and gently crushed just after dusk on a cool night. Matured in new & used French oak barrels for 15 months. A Cabernet with dense ripe red and blue lifted fruits and rich cassis and tobacco notes. Some spice mixed with earthy tones. The wine is full bodied and fruit forward with pleasing black fruit surrounding a leafy core. The tannins are fine and focused. Good cleansing acidity with an elegant but savoury finish

Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. The Glaetzer name comes with as much heritage as this classic Australian blend. Rich, ripe and full bodied, this unfiltered red is a parfait of mouthfilling complexity. Made by Ben Glaetzer, the Anaperenna Shiraz Cab is not only striking in label, it's also striking on the palate. Destined to be a long lived blend with the Cabernet structure keeping the plush and vibrant Shiraz fruit in check.

The aroma is of blackberry and cassis with no leafiness and an earthy, Moroccan leather bouquet typical of the Whalebone terroir. The flavours are rich and strong with an underlying fresh varietal complexity including the spiciness of Cabernet and the fresh leather and anise of Shiraz. The tannins are at once grainy and substantial providing a savoury and long finish. This is an excellent example of Australias own red blend and a pure expression of these unique terroirs.

It would be difficult to find a more classically Médoc wine than this great Cantemerle, with its sustained power and refined elegance. A very deep color and subtle aromas underscore its youth. Once in the mouth, this rich and full-bodied wine releases notes of coffee, olives and licorice which are emphasized by an opulent and harmonious length. A fine wine which marries fullness and delicacy, while avoiding heaviness and excessive oak.
