Forester Estate Margaret River Jack Out The Box Rose

Grape variety - 100% Malbec. Oak maturation - 4 months in 100% 4 year old French oak barriques. Colour - Pale pink. Aroma -A complex and fragrant rosé that opens with savoury notes, strawberry, dried flowers, musk, brioche, flint and spice. Palate -Full with a rich creamy mouthfeel and firm acidity. There are flavours of strawberry, nougat and musk. A richer style of rosé with a dry finish. Food matches -Chicken terrine, seafood, grilled vegetables. Peak drinking - Drink now. Viticulture -Fruit to make the Jack out the Box Rosé was sourced from a premium vineyard in Margaret River. Close monitoring and analysis of these vines leads to shoot or bunch thinning by hand if required to obtain the perfect balance for good exposure and healthy ripening. A philosophy of minimal inputs in this premium block allowed the unique combination of variety, soil type and microclimate to shine through and produce a parcel of fruit with true character. The 2023 vintage was a mild year in Margaret River allowing enough time to ripen fruit to our specification. Winemaking -The Malbec grapes were harvested early in the morning, then sent directly to the winery for processing where the free run juice was separated from the skins immediately to limit colour and phenolic extraction. The clarified juice was transferred to old French oak barrels for fermentation in a cool room. All barrels were stirred fortnightly until blending and bottling. Storage & Bottling -The 2023 Jack out the Box Rose was bottled in August 2023 to flint premium claret glass with a stelvin closure.

The 2018 Cannonball has plush blackberry, cassis, dried sage, olive and grilled tomato fruit aromatics with complexing white flower and dark chocolate as the wine opens up. The palate has silky and rich black fruits with the underlying savoury complexity of the 3 varieties. The layered tannin structure offers depth finesse and length with chocolate and emery texture. Finishes long with olive, Blackberry and dried herbs lingering.

Howard Park Leston Cabernet Sauvignon

Howard Park Leston Cabernet Sauvignon, a wine of good structure and power. Bright red crimson in colour. Red currant fruits, a hint of violets and oak on the nose. This full bodied wine had great elegance on the palate and a lengthy finish. No doubt one of the best example of the region.

Forester Estate Margaret River Premium Home Block Shiraz

Grape variety - 100% Shiraz. Oak maturation - 40% new and 60% older French. notes. Colour - Deep red with purple hue. Aroma - Concentrated with bacon fat, pepper, lifted florals and incense. There’s an underlying meaty-gravy complexity with balanced oak, mulberry and plum. Palate - Full with a dense texture and fine grain tannins. The palate is loaded with pepper, beef gravy, potpourri, black raspberry, mulberry and plum. A complex, savoury and elegant wine that’s more Syrah than Shiraz Food matches - Seared prime beef and roasted root vegetables or Fillet of venison with wild mushrooms. Peak drinking - Drinking well now but will show further integration over the next 8 - 10 years. Viticulture - The Home Block Shiraz vineyard comprises 0.7 ha of open lyre, minimal irrigated vines planted on ironstone gravel over deep friable loam. Judicious shoot and bunch thinning is always used to maintain a very light crop which was hand picked in early March of 2021. Harvested at 12.5º Baume the fruit exhibited intensely concentrated flavour and colour. Winemaking - The hand picked fruit was harvested early in the morning and processed straight away. 5% whole bunches, including stalks were placed into the bottom of the fermenter before filling. The remaining fruit was de stemmed into the small open fermenter with heading down board, which keeps the cap fully submerged between drain and returns. After nine days of fermentation, the fruit was pressed into a blend of new and used French Burgundian barrels. Storage and Bottling - Maturation lasted 11 months before the wine was carefully blended and bottled. Bottled under screw cap to retain freshness in a premium Burgundy bottle. Held in bottle for approximately 1 year prior to release.

This wonderfully elegant Shiraz shows intense, pristine, blackberry fruit and ripe, silky tannins. It almost has a Pinot Noir elegance to it and, luckily, the quality of future vintages will only be getting better too as Voyager's new clones come on line.

Forester Estate Premium Cabernet Sauvignon

This Margaret River is ripe, complex and concentrated showing classic Margaret River Cabernet characters of cassis, mulberry and bay leaf. There is balanced cedar oak along with cocoa powder, damp earth and gravel dust. The palate is full and structured with fine grain tannins. There is cassis, cocoa, bay leaf, damp earth and cedar oak. The wine has a firm, long finish with enough concentration and structure to provide medium to long term ageing. Match with traditional roast lamb with rosemary. A family owned and run winery situated in the Northern Margaret River wine region. Kevin & Jenny McKay established the winery in 2001, twenty years on and the aim is still the same. Forester Estate is absolutely committed to the approach of fruit sourcing with considerable resources applied to small batch winemaking in an effort to discover the ‘gems’ that lie among the hills and valleys of Northern Margaret River. Colour: Deep red with purple hue. Aroma: Clean and fragrant, showing great purity and concentration. The wine opens with blackberry, cassis, gravel dust, bay leaf, cocoa and fine cedar oak. Palate: Full and dense with fine powdery tannin. There are flavours of cassis, bay leaf, blackberry, cocoa, gravel dust and cedar oak. A powerful wine, decanting recommended.

Leeuwin Estate Prelude Cabernet

The bouquet shows great density, ripe concentrated blackcurrant, anise, black cardamom and lifted lavender with hints of black olives and plum aromas. The entry on the palate is soft and succulent whilst displaying a subtle texture with a black core of fruit including boysenberry, dark cherries and olive tapinade. The tannin and acid are seamlessly integrated from the front through to the long and lingering finish.
