WINEMAKING:Chardonnay fruit from Boyup Brook was machine harvested at night and sent to the winery in the cool hours of the morning. This gave ample time for the juice and skins to be in contact, before pressing off. Fermented in a mix of stainless and older oak to give variation and interest. Staves were added to the tank ferment to build structure and direction in the wine and give it subtle oak influence.
