The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. Growing up in the Hunter Valley, he was encouraged to be adventurous, curious and hard working. It was playing rugby in many of the world’s winemaking regions, travelling and working through New Zealand, France, Spain, Portugal, US, Italy, Coonawarra, McLaren Vale and Margaret River that sparked a further love of wine. He’s now settled in Margaret River where he has the 'opportunity to work on the land and create something that speaks of its place'.

This Semillon Sauvignon Blanc blend is a Western Australian staple with gooseberry flavours along with real citrus zest lift and a cleansing back palate. But it is the complexity in this wine that is truly remarkable and something that isn't often seen in this blend.

Evans & Tate is arguable the most famous name in Western Australia wine, and now the Tate name has been re-born in the Franklin Tate Estates wines made by esteemed winemaker, Rory Clifton-Parks. Franklin Tate himself has sought out the finest vineyard sites in the Margaret River region to deliver superb, terroir driven, wines that showcase the tradition and longevity of the Tate name, but also a modern and innovative wine-making approach. The Chardonnay was one third fermented in fine French Oak barriques delivery a soft and creamy mouthfeel, yet still with varietal lift and fine acid balance.

Since 1976 the iconic Marri tree line has featured on the Cape Mentelle labels. The Tate family are one of the most famous wine names in Western Australia, especially in Margaret River. It was the Tate family who began Evans & Tate decades ago and today the Tate name is re-born under the Franklin Tate Estates label. Franklin, son of John, has sourced some of the most prestigious vineyard sites in Margaret River and has highly regarded winemaker Rory Clifton-Parks to handcraft the quality wines. The Semillon Sauvignon Blanc is a traditional Margaret River blend that displays characters of lifted lemon and a hint of cut grass. The palate is refreshing and cleansing with a lovely crisp finish.

TASTING:Bursting with lively aromas of fresh-cut grass alongside crushed mint, gooseberry and white florals. The palate is fresh and lively, with notes of passionfruit, guava and tropical fruit. Fermented at cool temperatures in stainless steel tanks to preserve the aromatics and flavours of this wine. Viticulture - Fruit is sourced from neighbouring properties in the northern Yallingup sub-region of Margaret River. Direct input from Forester’s viticulturist ensures well balanced canopies and crops are grown for the ripe style desired. The 2022 vintage was a mild year for white grapes in Margaret River, allowing plenty of time during January and February to ripen the fruit to our specification. Winemaking - Modern white winemaking techniques are employed in the production of the Lifestyle Sauvignon Blanc, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. The clarified juice is then racked to a fermentation tank. A range of specially selected yeasts are employed on different parcels of fruit and the resulting dry tanks of wine are carefully blended to maintain the Forester Style. Storage and Bottling - Bottled under screwcap into a burgundy bottle.

There is a floral perfume along with subtle yeast lees complexity. Palate - Light and textured with a fine creamy texture. Pear, fennel, lime and honeydew melon dominate the clean and lively palate. A wine with great drinkability. Food matches - Fresh seafood and light poultry. Viticulture - Fruit is sourced from neighboring properties in the most northern sub-region of Margaret River. Direct input from Forester`s viticulturist ensures well balanced canopies and crops are grown for the desired fresh fruit driven style. The 2022 vintage was a mild year for white grapes in Margaret River, allowing plenty of time during January and February to ripen the fruit to our specification. Grapes were harvested at a lower baume to achieve the delicate style. Winemaking - Modern white wine making techniques are employed in the production of the Brut Cuvee, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. A long cool fermentation follows, allowing for the retention of the delicate fruit characters in the base wine.

Fresh, pungent and layered wine by Evans & Tate. Gooseberry, lime leaf, melon and lychee with a regional grassy lift. Behind this sits subtle notes of custard apple, toast and spice from a touch of wild barrel fermentation. The Semillon Sauvignon Blanc style continues onto the palate which is fleshy, long and fresh.
