It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. Its textural quality enhances the complexity and balance of the wine, ensuring it is thoroughly enjoyable. WINEMAKING:Grapes are harvested at night, crushed and pressed. Fermented at cool temperatures in stainless steel tanks to preserve the aromatics and flavours of this wine. The uniqueness of the Sav Blanc is the secret blend of other varietals giving brightness and complexity.

This attractive blend displays lively aromas of freshly cut grass, grapefruit, passionfruit and gooseberries. The primary fruit complexity on the mid palate maintains interest from start to finish.
