We make our Mistelle using Chardonnay grape juice which is fortified with spirit and then matured for a number of years in older oak barrels. This allowed the wine to develop the desirable complex characteristics of the desert wine style. The result is a deliciously light desert style wine. This sparkling wine is named after our grandmother Merle "Dulcie" Spry also affectionately known as Granny Cookie. It has been made from a blend of Chardonnay and Pinot Noir. The wine shows a fine bead with a lifted floral aroma and fresh fruit forward palate with subtle yeast characteristic, it finishes with a refreshing touch of apple and citrus.
