Forester Estate Margaret River Georgette Sparkling Brut
Palate - Light and delicate with a tight, fine line of acidity, leading to a long focused palate with a creamy texture. Rich autolysis characters of brioche and nougat lead the way with hints of citrus, almond, fennel and hay. This refreshing wine has a long, dry, crisp finish. Winemaking The Chardonnay fruit is gently pressed off skins with a series of press fractions going to separate holding tanks for later assessment. The juice is settled bright and fermented cold with a neutral yeast strain in stainless steel. No malolactic fermentation takes place, so as to obtain a finer, tighter acid structure. The wine was then bottled on the 23rd of May 2019 with a dose of active yeast and sugar (known as ‘tirage’) to encourage the secondary ferment. The bottle ferment lasts approximately six weeks after which the tirage sparkling wine rests in storage for four years gaining complexity from contact with the yeast lees. When deemed to be balanced and with sufficient autolysis character, we send the bottles for riddling and disgorging where the yeast plug is removed and the cork inserted. This wine was disgorged on the 7th of July 2020. Storage/Bottling - The unique nature of this sparkling wine is that bottling occurs as part of the winemaking process early in the wine’s life. In the case of the Georgette, the final disgorging and packaging process occurs four years after the wine is first put to bottle. Heavy grade sparkling glass, stylish labeling and the traditional white hood of the Forester brand complete the elegant package.

Grape variety - 100% Shiraz. Oak maturation - Portions of old and new French oak for 15 months. Colour - Medium-deep red with purple hue. Forester Estate Margaret River Jack Out The Box Semillon
Grape variety - 100% Semillon. Oak maturation - 11 months, 11% new and 89% 2-year-old French oak barriques. Aroma - Intense and complex with herbaceous notes of nettle, snowpea, lemongrass, thyme and lantana. Subtle and well balanced cedar oak intertwines with complex characters of lanolin, wax, citrus and dusty earth. Palate - Rich, full and textured, the palate shows a fine structure from use of skin contact. Intense flavours of dusty snowpea, nettle, thyme and fennel are beautifully layered with fresh lime and subtle hints of smoky lanolin that go on forever. A wine with great depth and potential that will gain even more complexity with time. Food matches - Fresh seafood, French Camembert, Stiffed figs with goats cheese and prosciutto. Peak drinking - Drinking well upon release but has the potential to evolve and impress towards 2030. Viticulture - Fruit sourced to make this Semillon was grown with absolute attention to detail. Identification of soil boundaries within blocks is the first step in selecting potentially superior fruit. Close monitoring and analysis of these vines leads to shoot or bunch thinning by hand if required to obtain the perfect balance for good exposure and healthy ripening. A philosophy of minimal inputs in this premium block allows the unique combination of variety, soil type and microclimate to shine through and produce a parcel of fruit with true character. The 2020 vintage was a warm year in Margaret River allowing plenty of time during January and February to ripen the fruit to our specification. Winemaking - The fruit was harvested early in the morning with 25% being crushed into 1 tonne fermenters for natural fermentation on skins for two weeks. The remainder was drained and pressed with the cloudy juice being sent to new and old barrels for natural fermentation. All barrels were lees stirred over 11 months before clarifying and blending of the best barrels. Storage and Bottling - The 2020 Jack out the Box Semillon was bottled in February 2021 to super premium reverse claret glass with a screwcap closure. This wine is drinking exceptionally well now and with prudent storage should continue to show well towards 2030.
Forester Estate Margaret River Premium Cabernet Sauvignon
Grape variety - 87% Cabernet Sauvignon, 12% Cabernet Franc, 1% Petit Verdot. Oak maturation - 16 months in 54% new, 46% two and three year old French oak barriques. Colour - Medium-deep red with red-purple hue. Aroma - Fragrant and concentrated, the wine has classic Margaret River Cabernet characters of cassis, lavender, damp earth and bay leaf with cedar oak and gravel dust. Forester Estate Redtail Liqueur Muscat
500mL bottle sold in an attractive gift box. Grape variety - 100% Brown Muscat. Oak maturation - 100% in old 500 Litre puncheon barrels. Typical analysis - 18.4% Alc/Vol. Colour - Amber with an olive green hue. Aroma -Intense aromas of raisins, nuts, caramel, sweet spice and dried fruit. Palate -Luscious and rich with a silky texture. There are intense flavours of caramel, nuts, dried fruit and raisins. The wine has a long and slightly sweet finish that entices you back for more. Food matches -Dark chocolate (70%) sticky date pudding, salted caramel peanut butter truffles, hard cheese or blue cheese. Peak drinking - Upon release, ready to drink now. Viticulture -Muscat à Petit Grain Rouge (known locally as Brown Muscat) is used in the production of this wine. Its sourced from a single grower in the northern Margaret River region of Yallingup. The fruit is picked very late in the growing season when the grapes are starting to raisin on the vine. This is to allow for the concentration of sugars and flavours which is very important in the production of this wine type. The fruit is then handpicked when it’s in the range of 16.5 to 17.5 baume. Winemaking -The Muscat grapes are crushed into a small fermenter and left to soak on skins for 2 to 3 days to help rehydrate and extract more sugar from the raisins. The sugar level will increase during this time. Yeast is then added to start the fermentation which only lasts a few days. During this time, the ferment is pressed to extract all juice from the skins. When the desired sugar level is reached, 95% spirit is added to stop the fermentation, taking the alcohol level of the wine to around 18%. The addition of spirit stops the fermentation leaving a large quantity of unfermented sugar leading to a very sweet wine. The sweet wine is then transferred to old 500 litre barrels known as puncheons. Here, the wine will mature for many years in barrel, slowly evolving into complex, sweet and luscious wines. This wine is made in most years, leading to a collection of barrels dating back to 2005. The art of making Liqueur Muscat is in the blending. It involves taking all the different aged barrels and blending them in the portions that produce a complex, lush and fresh wine ready for immediate consumption. Storage & Bottling -Maturation took place over many years in old, neutral 500 litre puncheons. This current Liqueur Muscat was blended in December 2021. It was bottled into a premium 500mL bottle under cork.
