Forester Estate Margaret River Lifestyle Cabernet Merlot
Grape variety - 68% Cabernet Sauvignon, 22% Merlot, 5% Cabernet Franc, 4% Petit Verdot, 1% Fer. Oak maturation - 100% of the wine is aged in French oak barriques (15% new) for 18 months. Colour - Medium deep red with purple hue. Aroma - Opening with gravel dust, plum, currant, cassis and mulberry fruit characters. This ripe fruit core is complimented by more complex characters of bay leaf, balanced cedar oak and a floral-violet perfume.Palate Plump and full with a fleshy texture, along with soft, silky tannins that fill the mouth. The ripe fruit of boysenberry, plum, currant and mulberry are supported by damp earth, cocoa and cedar oak. A ripe and easy drinking wine that is sure to please. Food matches - Meat dishes, saucy pastas and cheeses. Peak drinking - Drinking well now but will develop further over the next 5 to 8 years. Viticulture - Fruit is sourced from neighboring properties in the most northern sub-region of Margaret River (Yallingup). Meticulous management of bud numbers and shoot thinning continues to ensure a balanced canopy and full fruit ripeness. The 2021 vintage was a warm year in Margaret River, allowing plenty of time during February and March to ripen the fruit to our specification. Winemaking - Each parcel of fruit was gently crushed into small open fermenters with traditional heading down boards where fermentation was carried out under strict temperature controlled conditions. Extraction was achieved by daily draining of wine away from skins and returning back over the top, with fermentation and maceration times varying from 7 to 30 days. The wine was pressed to tank, where 100% was sent to new and older French oak barriques to complete the primary and malo-lactic fermentation. Storage and Bottling - After 18 months of ageing, the wine was carefully blended to achieve this friendly Margaret River style. Bottled in a premium claret bottle using a screwcap closure. This closure will ensure the wine retains its youth and fruit integrity.
Forester Estate Margaret River "Little Sweetie" Semillon Sauvignon Blanc
Grape variety - 99% Semillon, 1% Sauvignon Blanc. Colour - Pale straw-green. Aroma - Clean and ripe with lime, lychee, pineapple, candied lemon and snow pea. Palate - A rich and harmonious palate that is soft, silky and just a little sweet. There are fresh flavours oflime, honeydew melon and guava. Forester Estate Margaret River Jack Out The Box Semillon
Grape variety - 100% Semillon. Oak maturation - 11 months, 11% new and 89% 2-year-old French oak barriques. Aroma - Intense and complex with herbaceous notes of nettle, snowpea, lemongrass, thyme and lantana. Subtle and well balanced cedar oak intertwines with complex characters of lanolin, wax, citrus and dusty earth. Palate - Rich, full and textured, the palate shows a fine structure from use of skin contact. Intense flavours of dusty snowpea, nettle, thyme and fennel are beautifully layered with fresh lime and subtle hints of smoky lanolin that go on forever. A wine with great depth and potential that will gain even more complexity with time. Food matches - Fresh seafood, French Camembert, Stiffed figs with goats cheese and prosciutto. Peak drinking - Drinking well upon release but has the potential to evolve and impress towards 2030. Viticulture - Fruit sourced to make this Semillon was grown with absolute attention to detail. Identification of soil boundaries within blocks is the first step in selecting potentially superior fruit. Close monitoring and analysis of these vines leads to shoot or bunch thinning by hand if required to obtain the perfect balance for good exposure and healthy ripening. A philosophy of minimal inputs in this premium block allows the unique combination of variety, soil type and microclimate to shine through and produce a parcel of fruit with true character. The 2020 vintage was a warm year in Margaret River allowing plenty of time during January and February to ripen the fruit to our specification. Winemaking - The fruit was harvested early in the morning with 25% being crushed into 1 tonne fermenters for natural fermentation on skins for two weeks. The remainder was drained and pressed with the cloudy juice being sent to new and old barrels for natural fermentation. All barrels were lees stirred over 11 months before clarifying and blending of the best barrels. Storage and Bottling - The 2020 Jack out the Box Semillon was bottled in February 2021 to super premium reverse claret glass with a screwcap closure. This wine is drinking exceptionally well now and with prudent storage should continue to show well towards 2030.
Forester Estate Margaret River Premium Home Block Shiraz
Grape variety - 100% Shiraz. Oak maturation - 40% new and 60% older French. notes. Colour - Deep red with purple hue. Aroma - Concentrated with bacon fat, pepper, lifted florals and incense. There’s an underlying meaty-gravy complexity with balanced oak, mulberry and plum. Palate - Full with a dense texture and fine grain tannins. The palate is loaded with pepper, beef gravy, potpourri, black raspberry, mulberry and plum. A complex, savoury and elegant wine that’s more Syrah than Shiraz Food matches - Seared prime beef and roasted root vegetables or Fillet of venison with wild mushrooms. Peak drinking - Drinking well now but will show further integration over the next 8 - 10 years. Viticulture - The Home Block Shiraz vineyard comprises 0.7 ha of open lyre, minimal irrigated vines planted on ironstone gravel over deep friable loam. Judicious shoot and bunch thinning is always used to maintain a very light crop which was hand picked in early March of 2021. Harvested at 12.5º Baume the fruit exhibited intensely concentrated flavour and colour. Winemaking - The hand picked fruit was harvested early in the morning and processed straight away. 5% whole bunches, including stalks were placed into the bottom of the fermenter before filling. The remaining fruit was de stemmed into the small open fermenter with heading down board, which keeps the cap fully submerged between drain and returns. After nine days of fermentation, the fruit was pressed into a blend of new and used French Burgundian barrels. Storage and Bottling - Maturation lasted 11 months before the wine was carefully blended and bottled. Bottled under screw cap to retain freshness in a premium Burgundy bottle. Held in bottle for approximately 1 year prior to release.
Forester Estate Margaret River Yelverton Reserve Cabernet Sauvignon
Grape variety - 100% Cabernet Sauvignon. Oak maturation - 15 months, 60% new and 40% 2 year old French oak barriques. Colour - Deep red with red-purple hue. Aroma - A ripe, concentrated and complex wine that’s loaded with cedar oak, cassis, bay leaf, damp earth, dried lavender and gravel dust. Palate - Rich and long with very fine tannin. There are classic Cabernet characters of cassis, bay leaf, mulberry, cocoa and lavender with cedar oak in support. A ripe, brooding wine that will benefit from decanting. Food matches - This wine suits the classics. Try with matured hard cheeses, rosemary infused lamb or rare beef fillet steak. Peak drinking - Drinking well upon release but has the potential to evolve and impress towards 2032. Viticulture - Fruit sourced to make the Yelverton is grown with absolute attention to detail. The 2020 vintage was a near perfect growing season with mild day temperatures, cold nights and no heat spikes. Winemaking - Our Forester Yelverton Cabernet Sauvignon parcels are gently crushed to small open fermenters and receive a slight “drain-off’ of free run juice to increase the skin to juice ratio. This helps intensify the flavour, aroma and body of the wine without altering the underlying unique vineyard qualities present. A slow temperature controlled ferment is employed with daily draining away of fermenting juice under gravity and pumping back over the skins to assist in the extraction. Heading down boards keep the ‘cap’ of skins submerged beneath the cool fermenting wine to avoid excessive heat which we believe leads to a more refined wine. The ideal skin contact time in fermenter varies from one vintage to the next with the 2020 Cabernet spending an average 25 days in contact with skins before pressing out. The best parcels are aged in fine grained French oak barriques for 15 months with careful blending of the Yelverton taking place approximately three months prior to bottling. Storage and Bottling - The 2020 Yelverton was bottled in November of 2021 to premium claret glass with a stelvin closure. Stored in our temperature controlled cellar prior to release this wine is drinking exceptionally well now and with prudent storage should continue to show well towards 2032. Decanting recommended.

Rich aromas with bright fruit characters of pear, gooseberry and lime. There is the typical varietal characters of lanolin along with fennel, subtle quince and creamy lees. Rich with a soft creamy texture and balanced acidity. The palate is loaded with fresh fruit characters of gooseberry, pear, passionfruit and honeysuckle along with lanolin. Clean, bright and fruit driven with strawberries and cream, cranberry, candy floss and subtle hints of nougat and spice. The palate is long and focused with light and soft texture. There is strawberries and cream with spiced red apple leading to a soft long finish.

A slightly more serious style showing clean and focused characters of citrus, nettles, dried herbs and flint, with a touch of smoke adding complexity from partial barrel fermentation in one year old oak barriques. The palate has a fuller style that has great texture and freshness with dried herbs and citrus at the forefront.
