This Margaret River is ripe, complex and concentrated showing classic Margaret River Cabernet characters of cassis, mulberry and bay leaf. There is balanced cedar oak along with cocoa powder, damp earth and gravel dust. The palate is full and structured with fine grain tannins. There is cassis, cocoa, bay leaf, damp earth and cedar oak. The wine has a firm, long finish with enough concentration and structure to provide medium to long term ageing. Match with traditional roast lamb with rosemary. A family owned and run winery situated in the Northern Margaret River wine region. Kevin & Jenny McKay established the winery in 2001, twenty years on and the aim is still the same. Forester Estate is absolutely committed to the approach of fruit sourcing with considerable resources applied to small batch winemaking in an effort to discover the ‘gems’ that lie among the hills and valleys of Northern Margaret River. Palate - Light and delicate with a tight, fine line of acidity, leading to a long focused palate with a creamy texture. Rich autolysis characters of brioche and nougat lead the way with hints of citrus, almond, fennel and hay. This refreshing wine has a long, dry, crisp finish. Winemaking The Chardonnay fruit is gently pressed off skins with a series of press fractions going to separate holding tanks for later assessment. The juice is settled bright and fermented cold with a neutral yeast strain in stainless steel. No malolactic fermentation takes place, so as to obtain a finer, tighter acid structure. The wine was then bottled on the 23rd of May 2019 with a dose of active yeast and sugar (known as ‘tirage’) to encourage the secondary ferment. The bottle ferment lasts approximately six weeks after which the tirage sparkling wine rests in storage for four years gaining complexity from contact with the yeast lees. When deemed to be balanced and with sufficient autolysis character, we send the bottles for riddling and disgorging where the yeast plug is removed and the cork inserted. This wine was disgorged on the 7th of July 2020. Storage/Bottling - The unique nature of this sparkling wine is that bottling occurs as part of the winemaking process early in the wine’s life. In the case of the Georgette, the final disgorging and packaging process occurs four years after the wine is first put to bottle. Heavy grade sparkling glass, stylish labeling and the traditional white hood of the Forester brand complete the elegant package.

Grape variety - 100% Malbec. Oak maturation - 4 months in 100% 4 year old French oak barriques. Colour - Pale pink. Aroma -A complex and fragrant rosé that opens with savoury notes, strawberry, dried flowers, musk, brioche, flint and spice. Palate -Full with a rich creamy mouthfeel and firm acidity. There are flavours of strawberry, nougat and musk. A richer style of rosé with a dry finish. Food matches -Chicken terrine, seafood, grilled vegetables. Peak drinking - Drink now. Viticulture -Fruit to make the Jack out the Box Rosé was sourced from a premium vineyard in Margaret River. Close monitoring and analysis of these vines leads to shoot or bunch thinning by hand if required to obtain the perfect balance for good exposure and healthy ripening. A philosophy of minimal inputs in this premium block allowed the unique combination of variety, soil type and microclimate to shine through and produce a parcel of fruit with true character. The 2023 vintage was a mild year in Margaret River allowing enough time to ripen fruit to our specification. Winemaking -The Malbec grapes were harvested early in the morning, then sent directly to the winery for processing where the free run juice was separated from the skins immediately to limit colour and phenolic extraction. The clarified juice was transferred to old French oak barrels for fermentation in a cool room. All barrels were stirred fortnightly until blending and bottling. Storage & Bottling -The 2023 Jack out the Box Rose was bottled in August 2023 to flint premium claret glass with a stelvin closure.

Forester Estate Chardonnay is a refreshing fruit-driven wine. Pale lemon green in colour with intense roasted nuts, honey, ripe peach and a hint of smoky oak with lingering MLF on the nose. It is medium body with similar profile from the nose. Classic acidity structures with a toasty yet deliciously creamy finish.

Margaret River winemaker and vigneron Kevin McKay spent the first 15 years of his career developing his family’s Abbey Vale property. Clean, bright and fruit driven with strawberries and cream, cranberry, candy floss and subtle hints of nougat and spice. The palate is long and focused with light and soft texture. There is strawberries and cream with spiced red apple leading to a soft long finish.

Forester Estate focuses on showcasing the distinct regional characters of Margaret River fruit. Made by globally trained winemaker Todd Payne, this is a style of Chardonnay that has re-awakened the variety's popularity with consumers. Full flavoured, rich and ripe with a delicious spectrum of peach, cashew, grilled nut and mealy notes all balanced with some toasty oak and zesty length.

Always regarded as one of Margaret River's favourite wineries due to the inherant quality. Forester Estate seems to marry beautifully with their value-for-money philosophy. This Cabernet Merlot continues to win wide acclaim due to its dark purple colour and its lifted aromas of raspberries and black forest cake. Rich berry flavours are well balanced by a tight tannin structure typical of quality Margaret River Cabernets. The other great bonus is the ability of this great Cab blend to morph into a true cellar star.

Colour - Deep red with purple hue. Aroma - Ripe with dark fruit characters and toasty-cedar oak. The wine opens with mulberry, currant and blackberry with underlying complexity from bay leaf, gravel dust and subtle perfume. Palate - Full with a soft supple texture and fine tannins. Once again there are ripe fruit characters of mulberry, blackberry and boysenberry with cedar oak, bay leaf and lavender. The wine has a long soft finish. Food matches - Meat dishes, saucy pastas and cheeses. Peak drinking - Drinking well now but will develop further over the next 5 to 8 years.
