Viticulture -Fruit to make the Jack out the Box Rosé was sourced from a premium vineyard in Margaret River. Close monitoring and analysis of these vines leads to shoot or bunch thinning by hand if required to obtain the perfect balance for good exposure and healthy ripening. A philosophy of minimal inputs in this premium block allowed the unique combination of variety, soil type and microclimate to shine through and produce a parcel of fruit with true character. The 2023 vintage was a mild year in Margaret River allowing enough time to ripen fruit to our specification. Winemaking -The Malbec grapes were harvested early in the morning, then sent directly to the winery for processing where the free run juice was separated from the skins immediately to limit colour and phenolic extraction. The clarified juice was transferred to old French oak barrels for fermentation in a cool room. All barrels were stirred fortnightly until blending and bottling. Storage & Bottling -The 2023 Jack out the Box Rose was bottled in August 2023 to flint premium claret glass with a stelvin closure.

Aroma - Fragrant and concentrated, the wine has classic Margaret River Cabernet characters of cassis, lavender, damp earth and bay leaf with cedar oak and gravel dust. Forester Estate Sauvignon Blanc has clean aromas with underlying richness and varietal fruit characters of lychee and passionfruit. There's a subtle hint of blackcurrant along with lime and well integrated cedar oak. There is a herbaceous thread through the wine of pea shell and nettle along with underlying wood smoke. On the palate, full and textured with a rich creamy texture. There is lychee, lemon thyme, nettle, roasted red capsicum and passionfruit along with balanced cedar oak and wood smoke.

Forester Estate Chardonnay is a refreshing fruit-driven wine. Pale lemon green in colour with intense roasted nuts, honey, ripe peach and a hint of smoky oak with lingering MLF on the nose. It is medium body with similar profile from the nose. Classic acidity structures with a toasty yet deliciously creamy finish.

Classic Margaret River Cabernet can be found in every bottle of Forester Estate's Cabernet Sauvignon. Showing trademark characters of cassis, tabacco, earthiness along with fragrant aroma of mulberry, black currant and dusty oak, that can only be described as exhilarating. Finishing with grace and grainny tannins, this beautiful full bodied Cabernet will reward by careful medium to long term cellaring.

Rich aroma with a complex bouquet. The wine opens with intense yeast autolysis characters of pie crust, bread and nougat. There are underlying characters of citrus, apple and fennel, along with flint, hay and almond. Light and delicate with a tight, fine line of acidity, leading to a long focused palate with a creamy texture. Rich autolysis characters of brioche and nougat lead the way with hints of citrus, almond, fennel and hay. This refreshing wine has a long, dry, crisp finish. Ideal match with aperitifs, seafood, cheese or lightly flavoured poultry.

Rounded and smooth with a creamy texture and a fine line of acid. Ripe fruit with nutty - almond like oak. There is an underlying smokey-lanolin complexity with peach, nectarine,spice and lime.

Ripe and concentrated with a fragrant perfume of violet and incense. There are ripe dark fruits of currant and mulberry with pepper and lead pencil, which are balanced by more complex notes of damp earth and cedar oak. Full, firm, and structured with fine grain tannins. Once again, ripe dark fruits show through with a slight hint of pepper.
