El Cuatro Gin is a fiesta in a bottle. Inspired by the colour, energy and flavour of Mexico, this limited-edition gin layers fragrant habanero chilli, sweet agave nectar, aromatic oregano, zesty finger lime and bitter orange peel to create a gin that is vibrant, fresh and seriously delicious. This one has been distilled to be as good in a G and T as it is in our ginny take on a spicy marg.

After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Four Pillars Spiced Negroni gin cuts through the Campari and vermouth in your Negroni. It uses the base Four Pillars botanicals along with extra Tasmanian pepper berry leaf and cinnamon. There is also some West African spice called Grains of Paradise, with clove and Sichuan characters. Cameron uses organic blood oranges in the botanical basket, as well as ginger.
