Highland Heritage Mountain Flame Raspberry
This liqueur has a youthful, vibrant ruby red colour and brilliant appearance. The nose explodes with fresh raspberry aromas with a subtle background of fermentation characters derived from a neutral wine yeast. The palate is sweet, almost cloying with rich fresh raspberry characters, balanced with a clean acid and alcohol finish. The yeast fermenting characters are integrated well and add a slight complexity to the array of flavours. This liqueur wine has many uses and we recommend use as a flavour in champagne (Kir Royal), serve chilled over ice cream, or consume as an after dinner beverage with your favourite coffee or chocolate.
Highland Heritage Patrono Series Shiraz
Wine is a bright dense cherry red with a tinge of brick red. The bouquet exhibits lifted spicy ripe fruit and light earthy plummy Shiraz aromas, combined with soft vanillin oak characters. Full bodied, the length of the palate is filled with plummy spicy Shiraz flavours. Fruit characters are balanced by drying oak tannins which contribute both complexity and length to the wine. With a finish that is typical of cold climate Shiraz fruit crisp, clean and elegant.An ideal wine to accompany grilled red meats, curries, lamb, light game dishes or cheese.
Highland Heritage Mt Canobolas Merlot
Wine is a vibrant dark plum red colour with brick brown hues.On the nose a subtle white pepper and spicy berry fruit bouquet is rich and dominant. On the palate the lifted aromas follow through and complement the balanced structure of fine tannins, ripe berry flavours and a lean elegant finish. The fruit flavours fill the full length of the palate. This medium to full bodied wine will cellar for at least 8 years under the right conditions and combines beautifully with lamb, mild curry dishes or our favourite, Osso Bucco.
Highland Heritage Carmelo's Blend Very Old Muscat
Deep amber in colour with brick red, gold and brown tints which are an indication of the wines age. The base material is over 30 years old.It has a rich nutty rancio and complex bouquet with mature fruity Muscat grape flavours, oak and a hint of very old fine brandy spirit.A true liqueur Muscat style, it is a wine of high viscosity, luscious, rich, sweet and full flavoured. Complex flavours highlight the integration of fruit characters and oak maturation.

The wine is brilliant deep crimson red in colour with a tinge of brick brown. The wine demonstrates the benefits of using many traditional French Burgundy winemaking techniques, comprising of barrel fermentation, extended lees and skin contact, malolactic fermentation, and hot fermentation. These methods have produced a very complex wine, showing cherry, spice and strawberry like varietal fruit aromas with sweet vanillin oak characters derived from barrel fermentation in French oak and storage of 12 months in oak. A full flavoured medium bodied wine, with great length and solid structure, offering soft cherry and plum like ripe Pinot Noir flavours, complemented by fine grained tannins and attractive lingering French oak characters finishing with a crisp acidity.

The colour is a mixture of faded copper and pink.The nose is elegant showing sweet strawberry and cherry characters, with a hint of fennel in the background. The palate is clean crisp and elegant with good weight and structure, finished with clean crisp acidity. A wine developed for drinking in hot weather with robust garlic laden food, or chilled as is.

Deep dense crimson red in colour with a youthful purple hue the wine has lifted, cassis and herbaceous berry like fruit aromas currently dominating the bouquet with cigar box vanilla wood overtones. The palate is well structured and full bodied, featuring rich, ripe and persistent classic Cabernet flavours supported by a backbone of integrated, finely grained soft tannins and French oak. The ripe fruit flavours are enhanced and sweetened by the oak and finishes with a balanced crisp acidity. The wine is an excellent accompaniment for red meat dishes especially BBQ and heavy pasta dishes and curries.
