Highland Heritage Mt Canobolas Merlot

Wine is a vibrant dark plum red colour with brick brown hues.On the nose a subtle white pepper and spicy berry fruit bouquet is rich and dominant. On the palate the lifted aromas follow through and complement the balanced structure of fine tannins, ripe berry flavours and a lean elegant finish. The fruit flavours fill the full length of the palate. This medium to full bodied wine will cellar for at least 8 years under the right conditions and combines beautifully with lamb, mild curry dishes or our favourite, Osso Bucco.

Highland Heritage Special Reserve Vintage

A hot dry vintage produced Cabernet grapes that were too ripe and concentrated to make table wine. The wine was fortified on skins to extract maximum colour and flavour. The wines colour is a deep brick red with fresh purple tints. It has a rich fruity Cabernet bouquet with mature grape flavours, complexed with very old fine brandy spirit used in the fortification. A true vintage port style, it is a wine of high viscosity, luscious, rich, and full flavoured, and perfectly balanced by a slightly dry tannin finish. The great length of complex flavours highlight the integration of fruit character and brandy spirit esters and oils.

Highland Heritage Mt Canobolas Dry Riesling

The wine is pale gold in colour with youthful, green hues. The bouquet is elegant and intense with smoky citrus lime and floral varietal characters.The palate shows youthful intense varietal floral Riesling fruit characters filling the length of the palate balanced with a long crisp clean acid finish. There is also a hint of smokiness and lime characteristics, a full middle palate and a touch of alcohol sweetness on the finish. While extremely enjoyable now, the history of this wine shows it will gain further complexity and depth of flavour over the next 4 - 10 years. The wine is crisp and sophisticated and may be served alone or with fine cuisine such as white meat fish yabbies or seafood.

Highland Heritage Mt Canobolas Vineyard Syrah

The 2017 vintage in Orange was unusually warm and dry, giving this wine a strong backbone of ripe fruit characters.The wine is a bright dense cherry red with a tinge of brick red.The bouquet exhibits lifted spicy ripe fruit and light earthy plummy Shiraz aromas, combined with soft vanillin oak characters. Full bodied, the length of the palate is filled with very youthful plummy spicy Shiraz flavours. These fruit characters are balanced by drying oak tannins which contribute both complexity and length to the wine. With a finish that is typical of cold climate Shiraz fruit crisp, clean and elegant.

Highland Heritage Patrono Series Cabernet Sauvignon

Colour: Garnet with vibrant dark purple and brick brown hues.Nose: Delicate hints of dark berrys and dark cocoa with undertones of clove and oriental spice resulting in hints of smoky, almond and earthy characters from oak maturation.Palate: Soft mouth entry and acidity herald rich, fruity mid-palate fruit, flavours of currant, and fine tannin. The finish is dry, with subtle sour cherry flavours.Sulphites Added 14.4% Alc/Vol

Highland Heritage Mt Canobolas Fume Blanc

Fume Blanc is a term use for wood aged/treated Sauvignon Blanc, made famous by the Sancerre wine region of France. Pale straw in colour with youthful green tints, the bouquet explodes with grassy and elegant distinctive Sauvignon Blanc and asparagus/passionfruit/lime characteristics with rich vanilla wood overtones. The intense herbaceous fruit dominates on the palate with soft tannin and vanilla wood characters. The flavour fills the mouth and has a long lingering finishing with clean crisp acidity typical of an elegant cold climate white wine. Crisp and sophisticated this full bodied wine would be an ideal aperitif or serve with its perfect food partner steamed asparagus or with fine cuisine such as freshly chucked oysters.

Highland Heritage Mt Canobolas Cellar Release Chardonnay

Oak Maturation: 9 months in new and one year old French oak barriques. Monthly batonnage on lees. Vintage: The 2016 vintage cold and wet in the early part of the season. The temperature then spiked in early October continuing to a mixture of warm days wet days and cool dry nights in the latter part of the season. Most rainfall was in the pre Spring growing period with drip irrigation required towards the end of the growing period around April. Winemakers Comments: Only free run juice used in this wine, inoculated with Burgundian yeast strains. Barrel & malolactic fermentation at 20 degrees celcius. Lees stirring over a nine month storage period.Tasting Note: The colour is a vibrant straw with tinges of pale green. The nose shows peach and melon characters with subtle spicy vanilla wood characters. Undertones of cashew, butterscotch and vegemite umami from extended lees contact and careful oak selection. The pallet is showing rich peach and pear fruit with spicy undertones. Extended lees contact in French Oak barriques adds dimension and length to the wine providing great texture, intense flavour through the length of the pallet. The wines finished dry with crisp acidity and a gratifying creamy finish. The extra bottle age has enhanced the pallet texture and mouth feel.Food: Raw and lightly cooked shellfish like crab and prawns, steamed or grilled fish, fish pâtés, fish, chicken or vegetable terrines and pasta or risotto with spring vegetables. Also goes well with creamy vegetable soups.
