Levantine Hill Optume Yarra Valley Shiraz Made from 100% Shiraz from parcels selected by Paul Bridgeman, the wine is entirely matured in French oak (29% of which is new). The wine lands at 13.5% abv and has some weight to it but the vintage shows in the finesse of the wine as does Bridgemans finesse. Theres a brooding element to the nose in dried figs, dark spice and a slight edge of white pepper. The palate has a slow and steady pace that ebbs the flooding tide of dark flavours. The wine expresses characters of lemon curd, glazed apricot Danish, ginger snap and orange blossom team with savoury underlying buckwheat, lanolin and toasty char complexity. These work in concert with a tactile calcareous interplay underpinning a silky pear-like texture. A lingering line of acidity provides the backbone but allows for the richness, weight and flavour, directing to a resounding and expansive finish. where body, flavour & palate weight co-exist with structure, texture and restrained acidity. Complex fruit characters of white nectarine, saffron, Pink Lady apple, chamomile flower, cashews and Leatherwood honey work in concert with a tactile interplay of chalk, silkiness and Beurre Bosc pear-like texture. Subtle acidity provides the backbone conveying the fruit and weight to a resounding finish.

Levantine Hill Syrah has lifted complex aromas of dusty red berries, musk, cardamom and white pepper and vanillin oak. The elegant medium-bodied palate abounds with spice and earthy nuances in a concentration of savouriness. The silky ripe tannins have been deftly integrated with the underlying oak providing carriage for the fruit weight and lingering flavours to a pronounced and persistent finish.

The Levantine Hill Cabernet Sauvignon is redolent with blackberry, blackcurrant and cocoa-rich chocolate. The supple, balanced middle palate evokes truffle, bramble and earthy complexity. An outstanding example of the Yarra Valley region, its chewy, satisfying tannins are beautifully-integrated with fleshy fruit characters, hedonic spice and lingering, persistent length.

This savoury Pinot Noir is the result of an assemblage of twelve individual batches sourced from our Maroondah Highway vineyard. Subtle aromas of rhubarb, violets, earth, chervil, mace, leather, pencil shavings & cocoa nib with a stemmy note contributed by fermention with stalks. The composed elegant palate exhibits strawberry, tamarind & peach stone tartness from ingrained natural acidity, softly spreading fruit weight & sweeping talc-like tannins.

This Katherines Paddock Chardonnay combines the richness, drive and classicism of one clone with the fine-boned flinty structure and chalky notes of the other. It is stylish with the modern expression of Australian style Chardonnay: tense, taut and sulphidic. It reclaims the middle ground where body, flavour and palate weight co-exist with structure, texture and restrained acidity. This single-vineyard Chardonnay has well integrated natural acidity with rich varietal expression.

2014 is the inaugural release of Colleens Paddock Pinot Noir. It features a restrained, brooding and beguiling nose with hints of cranberry, sour cherry, wild raspberry, earth, stalks and charry oak. The aristocratic palate weaves an uncommon melange of toffee fruits, herbal flavours and savoury elements through fine, integrated tannins and delivers an elegant, luscious, velvety mouth feel. It combines lightness with richness and density with great length and persistence of flavour.

Drawing its inspiration from the Bordelaise tradition of blending multiple compatible grape varieties; This Levantine Hill Melange Traditionnel Blanc is a complex, aromatic wine that is crafted for its ageing ability. It displays subtle fruit characters of blood orange, musk, ginger, apricot and gooseberry on the nose with well-integrated savoury oak and acidity on the palate. It has a textural silky finish. A perfect foil for Munster or similar washed-rind cheese.
