A magnificent blend of Cabernet Sauvignon and Shiraz from the very best regions and vineyards available to Peter Gago and his team, the robust nature of the Cabernet grape give structure and body to the wine while the opulent Shiraz fruit provides suppleness and intensity. An iconic Australian blend and one of the most popular wines from Penfolds' Koonunga Hill range, this Shiraz Cabernet offers exceptional value. The wine is loaded with raspberry, mulberry and redcurrant are supported by a whisper of grainny tannins and well integrated oak backbone.

Bin 707 is a Cabernet Sauvignon reflection of Grange, intensely-flavoured fruit, completion of fermentation and maturation in new oak, expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australias finest Cabernets.

Unmistakably, Grange, this 2012 vintage is complex, flamboyant and lifted. An aromatic multi-cultural characteristics. The earthiness is well integrated with the aromas of dark fruits, grounded coffee, red liquorice and black olives, which leads to a firmly structured finish.

Since the early 90's, Penfolds have been producing Chardonnay from the cool climate region of Tumbarumba. The Chardonnay is elegant with white florals, stone fruits and a great acidity structure. Maturation in French Oak gives the Bin 311 a subtle nutty savoury flavour through and through. A great all season wine for all sorts of occasions.

Penfolds Max’s Pinot Noir is a tribute to former Chief Winemaker Max Schubert 1948 - 1975, a legend in Penfolds history. Max’s constant pursuit of excellence paved the way for those who followed in his footsteps and allowed the status and heritage of Penfolds to grow.

NOSE Fresh and inviting – complexed by yeast lees-derived nougat and ground pistachio/almond/roasted chestnut. Scents of deconstructed crème brûlée ‘(flamed top and custardy middle), enhanced by ripe white nectarine and peach fruits. A liberal sprinkle of crushed rock/pebble dust (quartz, limestone?) certainly adds interest. PALATE A very lively palate of freshly sliced cucumber and lime citrus flavours hovering over a soft and succulent acid underpinning. A tight phenolic grip induces wonderful length and drive to the finish. A cool climate regional trio – three different chardonnay expressions of texture/acidity/tightness/purity coalesce, propelling combined fruits/flavours. A ‘new Bin 311’ is revealed.

St Henri is a time-honoured and alternative expression of shiraz, and an intriguing counterpoint to Grange. It is unusual amongst high quality Australian red wines as it does not rely on any new oak. Released for the first time by Penfolds in the early 1950s (first commercial vintage 1957), it gained a new lease of life in the 1990s as its quality and distinctive style became better understood. Proudly, a wine style that hasnt succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters with age. It is matured in an assortment of old large vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of cabernet may sneak into the blend, the focal point for St Henri remains shiraz.

The Bin 389 style evolved as a result of experiments, by Max Schubert, in the 1950s to develop a highly individual wine using a blend of Cabernet Sauvignon and Shiraz with compatible oak treatment. Bin 389 combines the elegance of Cabernet Sauvignon with the richness of Shiraz and demonstrates the traditional Penfolds' trademark - balance between fruit and oak, giving the wine character and longevity.

A contemporary red blend that delivers juicy layers of red fruit and notes of cedar. The finish is delivered with a subtle oak texture and rounded tannins. Pair with savoury and slow-roasted meals. Colour: Saturated red core with a crimson rim. Aromas: An impression of chocolate Tiramisu and coco powder on the nose is very alluring. Dark chocolate custard, blue and black berries and exotic baking spices compete for attention. Shiraz playing a dominant role on the aromatic spectrum. Palate: Boysenberry ice-cream flavours flesh out the sumptuous palate, bolstered by Moroccan tagine spices and cumin roasted pumpkin. Earthy spices are rounded out by an invigorating red currant succulence. Tannins are powdery clearly showing the influence of cabernet sauvignon.
