Wolfburn Aurora Sherry Single Malt Scotch

Wolfburn is an independent distillery located in the town of Thurso on the tip of mainland Scotland. The Aurora isaged in a combination of ex-bourbon barrels and ex-sherry casks, giving the spirit delicious hints of dried fruit and sweet spice; on top of the already well balancedmalt and vanilla characteristics.As with all Wolfburn bottlings, colour is natural, there is no chill filtration and strength is 46%. This beautiful sherried whisky is made from spirit laid down in a combination of bourbon and Oloroso sherry casks. Benefitting from long fermentation and slow, gentle distillation, the spirit is laid down on-site in our purpose-built warehouses. At the end of the maturation process, the casks are brought together to create an exceptionally smooth and perfectly balanced dram. Tasting Notes On The Nose – Sherry sweetness is followed by aromas of freshly cut grass and autumn fruits, with just a hint of coffee and dark chocolate. On The Palate – Floral tones come to the fore, with overtones of spice and vanilla. Fruity sweetness coats the palate, with fruit and nut flavours leading to a warm, soft finish. Finish – The finish lingers gently; sherry tones are present to the very end. Beautiful. Non chill-filtered / Natural Colour

Wolfburn Northland Islay Single Malt Scotch

The Whisky has been aged a minimum of four and a half years in used Islay (ex Laphroaig) quarter cask barrels. It’s an outstanding dram that has justifiably garnered considerable praise from a number of the Whisky world's heavyweights (see Jim Murray’s notes below), proving our point that age statements are not necessarily all we should be looking at when judging the quality in the glass. Becoming Scotland's northernmost mainland whisky producing distillery when it released its first single malt in March 2016, Wolfburn is built just 350m away from the ruins of the 19th century distillery from which it takes its name. With long fermentation, slow manual distillation and maturation taking place at least partly in quarter casks that previously held peated whisky from Islay, this is a release eagerly anticipated. A deliciously complex single malt from one of Scotland’s newer distilleries. The smooth and warming flavours present in Northland come from the unhurried way in which the spirit is made, and from the maturation, which takes place in American oak quarter casks. Matured and bottled on site, Northland represents the first chapter in the history of Wolfburn. Tasting Notes On The Nose – Initially sweet with notes of fruit and fresh sea air. In the background you’ll find citrus freshness and hints of cereal, and just a trace of peat smoke. On The Palate – Sweet, nutty tones come to the fore, with hints of grapes and honey in the background. Floral flavours abound, enhanced with just a hint of dried fruit and spice. Finish – Soft sweet tones fade gradually away, overlaid with a just a trace of gentle peat smoke at the very end. Non chill-filtered / Natural Colour
